These Fluffy Vegan Oatmeal Whole Wheat Pancakes are the perfect way and healthy way to kick start your day! Completely fluffy and oil-free, these pancakes are truly irresistible. For Valentine’s Day, add a few slices of fresh strawberries and chopped walnuts and you have yourself a romantic breakfast dish. Made in just a few short steps and under 10 minutes.

Happy Tuesday!

We’re gearing down and are almost half-way into the week thanks to the MLK holiday. While most of you may have enjoyed a nice three day weekend, it was SUPER FRIGID here in NYC!

I mean, single digits. So, of course, it was the perfect day to remain indoors. Haha.

Today is pretty cold too, so indoors was yet another thing on my to-do list besides running a few important errands.

Of course, I had to kick things off with these delicious pancakes! With Valentine’s Day on the horizon, I’ve been whipping together a few recipes that I think would make perfect additions to the Day of Love, as many of us would call it. These pancakes made the cut!

But can we talk about the syrup that just brought everything together? My favorite organic maple syrup—by the Coombs Family Farms brand, is by far an awesome healthy option that just keeps giving!—a great taste that is!

Granted, this maple syrup is a bit pricey, however, you can always purchase the smaller sizes for less.

Usually, for Valentine’s Day, we like to “go all out” with gifts, eateries, etc.

However, because I’m a bit more health conscious, I’ve come up with great recipes that of course have flavor, a subtle amount of “Wowness”, and a whole lot of goodness as it relates to nutrients, etc.

If you’ve been an avid follower of Orchids + Sweet Tea, then you’ll remember my attempt at a romantic recipe for Valentine’s Day with these Red Velvet Waffles (loaded with candied bacon) and my take on a loaded Smoothie Bowl. Yes, I know. Over the top!

This year, however, I find that less is more and if I do choose to do “more”, it definitely in all the right places. Haha.

I chose to use whole wheat flour for these pancakes, specifically because I rarely use it and secondly, because these Whole Wheat Strawberry Pancakes were absolutely delicious! Granted, Whole Wheat flour is a bit thicker than regular All-Purpose flour, however, when used in the right recipes, it adds a nice weight and texture—-especially in pancakes.

Then there are these Maple Whole Wheat Oatmeal Strawberry Shortcakes which I must admit are one of my faves! They come with a sweet, flaky top + bottom, with nicely sauced strawberries slices in between and a spoonful of maple whipped cream to top things off. The perfect dessert for any occasion.

Last but not least, I must mention these Mini Vegan Strawberry Peach Galettes which I find to be so romantic and whimsical—perfect for Valentine’s Day! These Vegan Galettes come wrapped in a buttery, flaky cinnamon whole wheat crust; these galettes make for a great balance of fruitiness, not to mention the beauty from it’s open-face. These are the perfect hand-held pies!

OK, let’s dig right into these delicious pancakes, shall we?

Start by whisking together the whole wheat flour, rolled oatmeal, baking powder, cinnamon, and sea salt in a large bowl and set aside.

In a separate bowl, add the Almond milk, vanilla extract, maple syrup, whisking everything together until well combined.

Now, add the wet ingredients in with the dry ingredients and stir together with a spatula until well combined. **Try not to Over-mix.** Once fully combined let the batter sit for 2-3 minutes, so that ingredients can “activate”. NOTE: Batter should be thick, but slightly ‘liquidy”; if not, add a few Tbsps more of Almond milk until consistency is “in-between”.

Add a thin slice of vegan butter to a heated medium skillet and pour 1/3 cup of batter unto the surface of the skillet. Cook for about 1-2 minutes (until batter begins to bubble) and gently flip pancake to it’s opposite side, cooking another 1-2 minutes. Be sure to gently press down on pancake to ensure that center cooks through.

Once cooked and lightly brown, remove pancake from heat and repeat steps until all batter is used.

To serve, stack pancakes onto one another and add a few slices of fresh strawberries along with chopped walnuts (optional) on top and lightly drizzle with maple syrup, if desired.

Fluffy Vegan Oatmeal Whole Wheat Pancakes

Ingredients

  • 1 cup organic whole wheat flour (I use Bob’s Red Mill)
  • 1/2 cup organic rolled oats (I use Bob's Red Mill; GF version if preferred!)
  • 1 Tbsp baking powder
  • 1/4 tsp sea salt
  • 1 cup Almond milk (I use Califia Farms; You can use your fave plant-based milk!)
  • 2 Tbsps pure maple syrup (See Notes!)
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • handful of Fresh strawberries, sliced
  • 1/3 cup chopped walnuts, optional

Tips & Tricks

STRAWBERRY COMPOTE: Combine 3 cups diced strawberries, 1 cup pure cane sugar, 2 Tbsps lemon juice, 1/4 cup water, and 1/4 tsp vanilla extract in a medium saucepan and bring to a boil. Lower heat to simmer until the strawberries are soft. Now mix 1 Tbsp corn starch in a small bowl with 2 Tbsps warm water until well combined and lump-free. Add mixture to saucepan with strawberries and stir until syrup thickens and reduced slightly, approximately 8-10 minutes, Continue to stir occasionally.
SWEETENER: If you choose to opt out of pure maple syrup, you can always substitute with Agave as well.
