Would y'all believe only had my first biscoff cookie last year?? I know right? Practically criminal. Haha. Since then, I've been hooked and trying them in everything—from Bakery-Style Biscoff Cookie Butter Cookies to a 1-Layer Banana Biscoff Cake, and even in drinks like the Caramel Biscoff Cookie Butter Iced Latte. So, it was time to bring them into a breakfast recipe. Enter: Biscoff Cookie Overnight Oats!

If you know me, you know I'm a huge fan of overnight oats—they're my weekday staple! I love prepping them the night before and then I'm good to go for the next morning, especially when mornings can be a bit hectic with kids (If you know you know). Using Biscoff spread + cookies takes them to another level of deliciousness! The oats turn out incredibly creamy from the almond milk, and I have been eating them on repeat!

What Are Overnight Oats?

Overnight oats are the easiest way to make oatmeal! Essentially, it's cold oatmeal, but what makes it special is just how delicious and convenient it is. You mix rolled oats with milk in this case we use dairy-free milk, add your favorite flavors like fruits or nuts, and let it sit in the fridge overnight. By morning, you've got a creamy, chilled oatmeal that's ready to eat. It's like magic in a jar! Plus soaking oats can make them easier to digest because it begins to break down the starches, making them gentler on your stomach!

This overnight oats recipe is seriously so easy! It only takes 10 minutes of prep time. Simply mix in all your ingredients, excluding the Biscoff cookies to avoid sogginess. In the morning, just add your toppings, and you're good to go. You can even transfer it into a jar for a grab-and-go option!

Ingredients

OATS:

  • Organic rolled oats. Use GF-certified, if needed! My fave is Bob's Red Mill
  • Biscoff cookie butter.
  • Almond milk. You can use your fave plant-based milk, if desired.
  • Chia seeds.
  • Pure maple syrup. You can also use honey if not vegan.
  • Vanilla extract. A great addition of flavor and marries everything together. Always use pure vanilla and not the imitation flavor for the best results!
  • Ground cinnamon. It's a nice warming spice that goes perfectly with the other flavors.
  • Pinch of sea salt. This adds an extra pop of flavor to everything.

GARNISH:

  • Crushed Biscoff cookies. You can buy Biscoff cookies at major grocery stores or on Amazon.
  • Caramel drizzle. See below for how to make Vegan Homemade Caramel (Optional)
  • Melted Biscoff cookie butter. It's often located near the spreads or in the international foods section, or of course Amazon!

Here’s a step-by-step guide to preparing your vegan caramel sauce:

  • Get a medium-sized skillet and toss in some brown sugar.
  • Keep the heat about medium-high and stir the sugar constantly using a rubber spatula or a basting brush.
  • Add vegan butter slice and continue to stir until the mixture has melted.
  • Once the mixture is bubbly, add coconut milk to the skillet -- Keep stirring until the sauce thickens.
  • Remove the pan from heat and allow it to cool.
  • You’ve now got your dairy-free, healthier, and downright delicous caramel sauce ready.

Tips to Making the Perfect Overnight Oats

Here are some tips to help you make the perfect batch of Biscoff Overnight Oats -

SOAK THE NIGHT BEFORE

  • Always aim to make your oats the night before so that it has enough time to fully soak and marry all the great flavors.

MIX WELL

  • Give your mixture a good stir to ensure all the oats are coated and any flavorings are well distributed.

TEXTURE CONTROL

  • If your oats turn out too thick in the morning, you can stir in a little more milk to achieve your desired consistency.

CHOOSE THE RIGHT OATS

  • Organic rolled oats (old-fashioned oats) work best for overnight oats. Avoid steel-cut oats or instant oats, as they may not absorb the liquid properly.

Can I Eat Overnight Oats Hot?

That’s totally up to you! You can have these overnight oats hot, lukewarm, or cold! Whatever floats your oat boat! If you warm it up, keep in mind it will thicken up a bit so add a little extra of your favorite plant-based milk if you like the texture a little less thick.

Are Oats Healthy?

If you aren’t familiar, oats are super nutritious! They include a great source of carbs, fiber (the soluble kind!), protein, and fat. In addition, they are loaded with important vitamins, minerals, and antioxidants.

Can I make larger batches?

Absolutely! You can easily scale up the recipe to make a larger batch of overnight oats. Simply adjust the ingredient quantities accordingly, maintaining the same ratios. This is perfect for meal prepping. If you have kids, it's great to make overnight oats in lidded mason jars so the kiddos can grab breakfast and a spoon on their way to school.

Can i change up the flavor?

Ingredients

OATS:

  • 1 cup organic rolled oats (Use GF-certified, if needed!)
  • 3 Tbsps Biscoff cookie butter
  • 1 cup Almond milk (You can use your fave plant-based milk, if desired)
  • 1 tablespoon chia seeds
  • 2 Tbsps pure maple syrup (See Notes for sub options!)
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • Pinch of sea salt

GARNISH:

  • Crushed Biscoff cookies
  • Caramel drizzle (See Post for Vegan Homemade Caramel)
  • Melted Biscoff cookie butter

Instructions

MAKE THE OATS:

  • Add all ingredients to a medium bowl, stirring until combined and smooth.

REFRIGERATE OVERNIGHT:

  • Tightly cover bowl with plastic wrap and refrigerate overnight (or at least 8 hours).

ASSEMBLY:

  • To serve (hot or cold), add oats to a bowl or mason jar and top it with crushed Biscoff cookies, caramel drizzle (if using), and melted Biscoff cookie butter, if desired.
