Once again, we are all faced with the challenge of wondering what to eat this week. Coming up with exciting, delicious and easy weeknight meals can be so hard! But I am here to help you!

I actually love meal planning and prepping for the week. That is why every Sunday, I share my weekly meal plan and show you what I will be cooking for my family every day. From bold Jamaican flavored meals to delicious comfort foods, you will find a huge range of entrees on my list! I also throw in some tasty mocktails and easy weeknight desserts for you to try too.

Tip of the Week

Double It Up

I love meal prepping and having a freezer full of meals I can quickly reheat on busy nights. That is why I almost always double recipes when I cook. I make one meal for that day then store the rest either in the fridge or freezer to eat later on. Then, I always have a quick meal to grab in a hurry!

Almost all of my recipes can be doubled or tripled very easily. In fact, making a double portion takes the same amount of effort as a single portion so it is just logical to make extra! But here is a quick look at foods that do not freeze well so you can skip these items when planning to double up and freeze foods:

  • Cream cheese
  • Rice
  • Potato Dishes
  • Cooked Fish
  • Lettuce or leafy greens (aka you can't freeze a salad!)
  • Puddings (they won't thaw well)
  • Creamy soups

Instead of making extra to freeze, you can also just plan to make extra to eat as lunch during the week. The best lunches are dinner leftovers!

The main point is that making extra is almost always a good idea. Just make sure you store it properly, in the fridge or freezer, and you will have a delicious, homemade meal ready and waiting for you on the next busy night!
