Vegan Pesto Egg Avocado Toast

This Vegan Pesto Egg Avocado Toast is by far one of my favorite ways to have toast lately. A great rendition of savory flavors  from the mashed avocado, sautéed kale, plant-based pesto eggs, and deliciously roasted bell peppers and tomatoes and it's super easy to make! Spruce things up by adding my easy dairy-free garlic dressing for additional flavor! All dairy-free + vegan ingredients. Gluten-free option available.

Since my last encounter with avocado toast, I've truly been into enjoying breakfast this way and I won't go back. Haha. Seriously, whoever invented the avocado toast is genius and I just love how versatile this dish is. You can literally put almost anything on your breakfast toast for a nice spruce up of flavor. This Vegan Pesto Egg Avocado Toast is just one of the examples of how delicious your next breakfast toast meal can be! Believe me!

And if you haven't tried my Mind-blowing Avocado Toast then you're really missing out! Honestly, I couldn't be more ecstatic to share this savory little number with you guys! It took me awhile to jump on the Just Egg bandwagon when it came to eating plant-based 'eggs', but ya'll------it's really good! The texture, the versatility, the flavor---ALL SO GOOD!

Whether you're in a hurry in the mornings or you're looking for a laid-back ease as a way to start your day, this avocado toast is super easy to make, only uses a handful of ingredients, and goes with any cup of coffee or tea that your heart desires. It only consists of five main components: the toasted bread, mashed avocados, sautéed kale, plant-based pesto eggs, and roasted peppers + tomatoes. So delicious!

What is Avocado Toast?

Basically, avocado toast is an open sandwich that consists of some sort of toasted bread that comes topped with mashed avocado and a few pinches of seasonings. Of course, in recent time, avocado toast has been re-invented and has included many other toppings in addition to mashed avocados, which has made it a true morning staple.

How to Make Vegan Pesto Egg Avocado Toast

In just a few short steps, you’ll have the most delicious breakfast toast —- Vegan Pesto Egg Avocado Toast that’ll satisfy each morning craving possible. Here’s how to make everything:

First, roast the bell peppers and tomatoes by using a baking sheet, parchment paper, and a drizzle of olive oil and season with all herbs and seasonings.

Then in a bowl, add the avocados (by removing the flesh from their pits and skin) along with lemon juice, salt, black pepper, cajun seasoning, garlic powder, and cayenne pepper---mixing everything together until smooth and combined. Chunks are definitely OK!

Whip together your scrambled plant-based pesto eggs and set aside.

Toast your bread and mix together the dairy-free garlic dressing in the meantime. Then sauté the kale right quick!

Once everything is perfectly prepped, add dollops of mashed avocado to the tops of toast followed by sautéed kale, pesto eggs, roasted peppers and tomatoes and drizzle of garlic dressing.

For the best avocado toast, it’s all about the toppings! It’s about whether you want to load up your toast or keep it really simple. Either way, it’ll be a quick fix in the morning.

Here’s what you need for the toast:

  • Bread. I love using rustic bread such as sourdough, however, any type of bread [vegan-friendly] works just fine!
  • Avocados. I like to use organic Hass avocados.
  • Lemon juice. I like to freshly-squeeze 1 lemon. You can also use lime if preferred.
  • Kale. Be sure to chop your kale leaves (de-stemmed) well into bite-sized pieces.
  • Olive oil. Use a nice high-quality extra-virgin olive oil. You can also use grapeseed oil, coconut oil, or avocado oil.
  • Vegetable stock/broth. This helps the kale to wilt when sautéed. You can also use water instead.
  • Tomatoes. You can add as many tomatoes as will fit on your baking sheet.
  • Bell peppers. You can use regular sized bell peppers, chopped small or mini sweet peppers.
  • Dried herbs. I like a mixture of seasonings and herbs like salt, black pepper, garlic powder, cayenne pepper, oregano, parsley, etc.
  • Cajun blend. I like to add a bit of spice to this toast. You can use a homemade or store-bought blend like Spiceology's Black Magic Blend.
  • Pesto sauce. You can make your own from scratch or use a high-quality store-bought version like Whole Foods or Rao's.
  • Homemade sauce/dressing. I love using my homemade garlic dressing, which both adds a nice finish to this avocado toast. You'll need garlic (minced), Almond milk, vegan mayo, and seasonings.
  • Plant-based eggs. I love using JUST eggs as an option. If you don't want eggs, feel free to sub with silken tofu, tempeh, or beans.

Here's what you need to make this one-step pesto:

  • Spinach. You can also use kale if you like. This adds an extra boost of bright green color to the sauce.
  • Basil. You can't have pesto without it!
  • Walnuts. You can also use pine nuts if you like.
  • Olive oil. Choose a good-quality oil with a robust flavor.
  • Lemon juice. this helps keep the pesto bright.
  • Garlic. Fresh garlic will give you the best flavor.

Nut-Free Pesto

Traditionally, pesto contains nuts. However, you can substitute the walnuts in this recipe with sunflower seeds or pumpkin seeds for a nut-free version.

How Else to Use these Plant-based Eggs

Personally, I found that these plant-based JUST eggs are not only great scrambled, but also made as an omelette and perfect for things like quiche, frittatas, stratas, etc. They truly are easy to make and incorporate into your favorite breakfast dishes.

Tips for Cooking the Best Vegan Breakfast Eggs

Whether you've ever tried making these plant-based eggs or not---I've come up with a few tips to ensure that they come out as fluffy and perfect as possible. And don't worry---they do take a little longer to come together than traditional eggs, but once they do---they're SO amazing and the texture is very similar to their traditional counterparts.

When making these plant-based eggs, I found that:

  • Having a non-stick pan works wonders and makes things much easier!
  • Keeping the temperature to medium-low so that they can cook through long enough without burning is key!
  • Waiting for the edges to appear "dry" which means that they'll easily scramble better and begin to form does the trick.

Herb Roasted Peppers + Tomatoes

The herb-roasted tomatoes offer a delicious umami-packed flavor foundation for this delicious Vegan Pesto Egg Avocado Toast.

You can make them ahead of time in the oven, then keep the bell peppers + tomatoes in the fridge unit you’re ready to assemble the entire dish. They’ll stay fresh for up to three days in an airtight container.

The Best Bread for Avocado Toast

A crusty rustic bread is perfect bread for this Vegan Pesto Egg Avocado Toast. They are naturally thin, so the slices end up being perfectly sized. They are light and airy, so the toast is not too dense upon biting. Because of the large air pockets in the bread, they make for a lovely mouthfeel. Tips to Making the Perfect Avocado Toast

When it comes to making avocado toast in general, there are just a few small steps that you can take to ensure that it comes out perfectly every time.

PICK THE BEST AVOCADOS FROM THE START

Picking the best avocados is by far the most important part of this entire toast. I love using Hass avocados, however, you can use other types. Always make sure that they are fully ripe but over-ripe (meaning it's extremely soft to the touch). For the best check---always look for avocados that have a good squeeze and isn't too hard or too mushy/soft.

Also, once open, if you find that there are brown bits or sections, be sure to cut those out and discard of them before you mash everything.

YOUR BREAD MATTERS

Again, I mention the best types of bread when making avocado toast, however, understanding just how important it is to choose the right bread is a must! I always like using thin sliced bread that hold up well, which is why I often opt for rustic bread. You can read further down as I go more into this. In addition, be sure to always toast your bread for a nice crunch and a strong foundation to hold your toppings.

MASHED AVOCADO IS BEST

I know that avocado toast has it's many variations these days, however, I've come to conclude that mashed avocado on toast is a lot better (and easier to eat) than sliced avocado. Granted, you can always switch things up based on preference, but if I'm honest, I found that having my avocados mashed allowed for more real estate when adding additional toppings.

Ways to Best Serve Avocado Toast

Again, enjoying your avocado toast in the mornings, for lunch or dinner is an easy task. Once you've made the perfect avocado toast topped with your favorite ingredients, here are drinks that you can serve it with depending on the time of day:

This Vegan Pesto Egg Avocado Toast is the best way to kickstart your day. Jam-packed with bold flavors and an easy assembly!

Ingredients

TOAST:

  • 2 slices rustic bread, toasted (I like to use sourdough or brioche bread; vegan-friendly)
  • 2 organic Hass avocados
  • 1 teaspoon freshly-squeezed lemon juice
  • 1 teaspoon cajun seasoning blend, optional (You can use homemade or a store-bought blend like Spiceology's Black Magic blend)
  • Pinch of sea salt + black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • 2 cups organic kale, chopped
  • 1 tablespoon Extra virgin olive oil
  • 1-2 Tbsps organic vegetable stock/broth

PLANT-BASED PESTO EGGS:

  • 1 (12 oz.) bottle JUST egg
  • 1 tablespoon Extra virgin olive oil
  • ¼ cup pesto sauce, homemade or store-bought (See Notes!)

ROASTED PEPPERS + TOMATOES:

  • 1 cup grape tomatoes, halved
  • 1 bell pepper, chopped (You can use any color)

DAIRY-FREE GARLIC DRESSING:

  • 1 cup vegan mayonnaise
  • ½ cup Almond milk, unsweetened (You can use your fave plant-based milk)
  • 3 garlic cloves, minced
  • 1 teaspoon minced fresh parsley
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions

TO ROAST THE PEPPERS + TOMATOES:

  • Be sure to roast your veggies in the oven at this point. See Roasted Herb Tomatoes recipe for instructions on how to roast the bell peppers and tomatoes.

MASH THE AVOCADOS:

  • In a bowl, add the flesh of each avocado (by removing the flesh from their pits and skin) along with lemon juice, salt, black pepper, cajun seasoning blend, garlic powder, and cayenne pepper, mashing everything together using a fork until combined and smooth. NOTE: chunks are OK to have if desired. Set aside in the refrigerator until ready to use.

MAKE THE DAIRY-FREE GARLIC DRESSING:

  • In a bowl, add the vegan mayo, almond milk, minced garlic, parsley, garlic powder, salt, and black pepper, whisking until everything becomes creamy, smooth and combined. Add to a small mason jar or container and refrigerate until ready to use.

TO MAKE THE PLANT-BASED PESTO EGGS:

  • In a medium (10-inch, non-stick) skillet over medium-low heat, add the olive oil and let it melt. Once heated, pour in the plant-based eggs along with the pesto. Let it sit for 2-3 minutes or until the edges begin to look "dry" before you begin to scramble. Continue to scramble and let it cook until it becomes "solid" and form like traditional eggs, about 5-6 minutes or so. Remove from heat and set aside.

TO SAUTE KALE:

  • In a medium skillet over high-heat, add the olive oil. Add the chopped kale followed by veggie stock/broth and stir until kale becomes wilted and tender, about 2-3 minutes. Remove from heat.

ASSEMBLY:

  • On a plate, add your toasted bread followed by spoonfuls of mashed avocado atop, spreading it evenly. Top with a bit of sautéed kale, spoonfuls of pesto eggs, then roasted peppers + tomatoes. Drizzle with garlic dressing. Repeat until all servings are made.
