With spring here, I've been on a total berry kick. And on busy mornings, regular oatmeal can be a bit much. That's where baked oatmeal comes in! I've shared recipes like Strawberry Shortcake Baked Oats and Jamaican-inspired Banana Bread Baked Oatmeal on my site, but this time, I wanted to LOAD UP on as many berries as humanly possible. And let me tell you, it's been a huge hit with my family, hence the name Crowd-Pleasing Berry Baked Oatmeal!

I went with blueberries, strawberries, and raspberries for that burst of berry goodness! Sweetened it up with honey, but if you're vegan, maple syrup works just as well. It's a high-fiber, protein-packed healthy breakfast that's great for busy mornings before work, school, or any day of the week!

And y'all let me tell you --- It's super easy to whip together, makes less mess (yes, to tossing everything together in one dish), makes a pretty decent batch for the entire family, and is basically “set it + forget it” vibes (hello, oven). What Are Baked Oats?

Basically, baked oats are the fluffy, cake-like version of oatmeal + muffins. Because you mix together oatmeal with baking ingredients like baking powder, eggs (when not vegan), etc. the results are incredibly airy, smooth, and cloud-like fluffy!

Plus, you're able to fully customize the flavors based on your personal preference and create a brand-new flavored experience based on toppings and other ingredients that you choose to include.

How to Make Berry Baked Oatmeal

There are a few key ingredients in this warm Berry Baked Oatmeal recipe that you may not usually use in your morning oatmeal. These make this recipe better for you and SO MUCH tastier. Plus it's so perfect for meal prepping!

Ingredients

BAKED OATMEAL:

  • Organic rolled oats. You can use gluten-free certified if needed.
  • Hemp seed hearts. These are optional but they add such a nice punch of protein and healthy fats.
  • Baking powder. This helps create a fluffy baked oatmeal.
  • Seasonings + spices. Sea salt, ground cinnamon + ground nutmeg
  • Maple syrup or raw honey. Opt for maple syrup to make this vegan.
  • Vanilla extract. Always use pure vanilla and not the imitation flavor for the best results!
  • Chia eggs or flax eggs. See recipe card for more info.
  • Almond milk. You can also use whole milk or your favorite plant-based milk. Provides moisture to the baked oats. Learn how to make your own homemade almond milk!
  • Melted vegan butter. You can sub with coconut oil.
  • Berries. Fresh blueberries, sliced strawberries + fresh raspberries.

Can I Serve Baked Oatmeal With Anything Else?

It's delicious on its own --- but you can definitely get creative! Serve it with a dollop of yogurt, a drizzle of nut butter, or a splash of plant milk for added creaminess. Fresh fruit or a sprinkle of granola can also be tasty additions.

Is This Berry Baked Oatmeal Gluten-Free?

Yes! This recipe is totally gluten-free for my celiac friends out there. Be sure to buy oats that state “gluten-free” on the package. Some oats are GF and some are not, so pay attention when shopping. If you are not sensitive to gluten, you can use any variety of oats.

How Long Do You Bake Baked Oats For?

The best part about this healthy baked oatmeal recipe is that it's pretty easy to make. Once you've mixed everything together and scoop it into your prepped baking dish (or skillet), then you'll bake it for 30-35 minutes or until the edges are golden. Wallah!

How to Make Baked Oatmeal in the Microwave + Tips

For an easy method outside of using the oven, you can make these berry-baked oats in the microwave. Simply add the oatmeal mixture to microwave-safe bowls and heat in the microwave for 90-120 seconds. The batter should rise once heated through.

Here are a few tips for making the best-baked oats:

  • For a more cloud-like feel, add a high-powered blender to blend the ingredients so that it's more of a smooth batter.
  • Double or triple the ingredients for a bigger serving.
  • Be sure to grease your baking dish, skillet, or ramekins properly to ensure that your baked oats don't stick.

What Type of Oats Work for Baked Oats?

Using the best type of oats is super important when achieving the fluffiness and softness of these strawberry shortcake baked oats. It's best to use rolled oats, old-fashioned oats, or oat flour. Unfortunately, steel-cut oats don't work for this!

How to Store + Reheat healthy baked oatmeal

Any leftovers can be kept in a tightly sealed container and refrigerated for up to 3-4 days. To serve, simply reheat in the oven (at 350 degrees Fahrenheit) , toaster oven, or microwave until warmed through.
TO FREEZE: To keep any leftovers for a longer period, simply allow baked oatmeal to fully cool before cutting it into squares and individually wrap each square in foil paper and then add them to a freezer-safe ziplock bag.

Can I use a different sweetener instead of honey?

Of course! Maple syrup is a great alternative for a vegan option, but you can also use brown sugar, agave nectar, or any sweetener you prefer.

Can I add nuts or seeds to this oatmeal?

Definitely! Adding chopped nuts like almonds, walnuts, or pecans can add a delicious crunch.

Can I use frozen berries instead of fresh ones?

Absolutely! Frozen berries work just as well and can be more convenient, especially when they're out of season. Just be sure to thaw and drain them before using to prevent excess moisture

Ingredients

BAKED OATMEAL:

  • 2 ¾ cups organic rolled oats (You can use gluten-free certified, if needed)
  • 1 tablespoon hemp seed hearts, optional
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ cup maple syrup or raw honey
  • 2 tsps vanilla extract
  • 2 chia eggs or flax eggs (See Notes!)
  • 1 ½ cups Almond milk (You can use your fave plant-based milk)
  • ¼ cup melted vegan butter (You can sub with coconut oil)
  • 1 cup fresh blueberries
  • 1 cup sliced strawberries
  • ½ cup fresh raspberries

Instructions

TO MAKE THE BAKED OATMEAL:

  • Lightly grease a baking pan (9 x 9″) OR 10-inch oven-safe skillet with vegan butter or oil and pre-heat the oven to 375 degrees Fahrenheit.
  • In a large bowl, add the Almond milk, maple syrup, chia or flax eggs, melted butter, and vanilla, whisking everything together until combined. Add in the dry ingredients: rolled oats, baking powder, cinnamon, nutmeg, hemp seed hearts (if using) and salt, stirring everything together using a wooden spoon or spatula until combined.
  • Fold in the blueberries, sliced strawberries, and raspberries.
  • Pour the mixture into the prepared pan or skillet, evenly spreading until even. Add fresh berries to the tops if desired.

BAKE:

  • Bake oatmeal for 30-35 minutes or until fully cooked through (less 'jiggly') and edges and tops are golden brown.
  • Remove from oven and let cool for 5 minutes or so. To serve, cut into desired sized squared pieces and drizzle with maple syrup and/coconut cream, if desired.

Tips & Tricks

  • VEGAN EGG SUBS: To make 2 chia eggs, you'll need 2 Tbsps of chia seeds + 3-4 Tbsps of warm water mixed together and let it sit for 5 minutes or until thickened and "paste-like". For flax eggs, just sub with flaxseed meal.
