Pan of Veggie Breakfast Strata missing a piece

Holiday mornings call for easy breakfast casserole recipes! Lately, I've been prepping ingredients ahead, making it a breeze to whip up and bake whenever the family gets hungry. A Veggie Breakfast Strata is the perfect answer to feeding your family on Christmas morning or whenever you need a quick-fix breakfast. Not only is this casserole eggy, silky, and light, but is green + red--- A perfect celebration of color during the holidays.

Just like my Southern Caprese Biscuit Breakfast Strata and Baked Pumpkin French Toast Casserole + Maple Pecan Sweet Potato French Toast Casserole prepping this the night before keeps mornings relaxed. It's a game-changer for a smoother holiday morning routine! Instead of using day-old bread like many strata recipes, I use organic canned biscuits to soak up the savory egg custard. Then I layer in tons of kale + herb roasted tomatoes before topping with shredded sharp cheddar cheese!

This Veggie Breakfast Strata is a lifesaver when feeding a crowd--loved by both kids and adults, this recipe is incredibly versatile, allowing for various ingredient tweaks--With a simple tweak like adding in bacon for a more 'meaty' option or using gluten-free biscuits, it easily adapts to different dietary needs. This overnight wonder takes just around 15 minutes to prepare, can be made ahead of time (seriously easy!), and bakes to perfection in 45 minutes + is totally worth the wait!

What Is A Strata?

Think of a strata as a delicious, layered bake! It's an Italian version of bread pudding--- filled with bread (You can use day-old bread, your favorite bakery bread, or canned biscuits, like me!) cheese, eggs, and whatever tasty bits you fancy—veggies, meats, herbs—just all mingling together. You mix everything up, let it cozy up in a baking dish for a bit, then pop it in the oven until it's golden and irresistible. It's like a hug in breakfast form, perfect for relaxed mornings or brunch with friends!

You will often find strata referred to as savory, and there are so many options! You can make breakfast, lunch, or dinner strata using your favorite ingredients.

How to Make Veggie Breakfast Strata

To start, simply lightly grease a medium baking dish (9 x 13″) with butter or cooking spray and pre-heat your oven to 400 degrees Fahrenheit then you will prepare the batter! Whisk together the eggs, milk, and herbs + seasonings. Add your biscuits (homemade or store-bought) pieces into the baking dish and spread around evenly then pour the batter mixture atop pieces. NOTE: It's OK if biscuits float to the top at this point. Then add in the greens and herb roasted tomatoes and bake to golden cheesy perfection!

How to Make Herb Oven Roasted Tomatoes

The key to this recipe is to start with great-quality tomatoes. Choose a mix of large and cherries, and several different colors if you can find them. Click here for the full recipe + tips

INGREDIENTS

  • Tomatoes. You'll need about 2 lbs. of tomatoes for this recipe. Again, choose a mix of small, large and cherries or any other shape + kind of tomato you like.
  • Olive oil. Don't skimp on the oil! It helps concentrate the tomato flavor and makes a nice jammy texture. You can use these roasted tomatoes like a dressing or sauce.
  • Herbs + Seasonings. A great addition of flavor. Adds such savoriness from the salt, black pepper, smoked paprika, parsley, basil, oregano, red pepper flakes, thyme, etc.
  • Thyme sprigs. You can add rosemary leaves as a substitute as well.
  • Garlic. You'll need about 3 garlic cloves, mincing them into smaller pieces to help spread the flavor.

Preheat your oven to 400 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper.

Add the seasoned tomatoes to the baking sheet (in a single layer) and add thyme sprigs and garlic cloves all around. Bake for 25-30 minutes or until tomatoes are charred, wilted, and tender. Remove and let cool slightly.

  • Bon Appetit!

Tips & Tricks

  • ADDITIONAL INGREDIENTS: While this recipe calls for sharp cheddar, spinach, kale, and tomatoes as the star ingredients, you can also create more savoriness by adding bacon + chicken (for a meat option), bell peppers, parmesan, mozzarella, gouda, or other cheeses if your heart desires. It's truly up to you!
  • BISCUITS: If using a store-bought version, I highly recommend using Annie's or Immaculate. Speaking of making your own biscuits, I highly recommend trying this Homemade Buttermilk Biscuit recipe by Sally's Baking Addiction!
