I'm constantly brainstorming new recipe ideas, and dressing + sauces just make everything better—they elevate virtually any dish! I was inspired to make an Asian, Japanese-inspired sauce, and this Creamy Carrot Ginger Dressing was exactly what I was looking for. It's vibrant, zesty, and creamy, and I adore having a batch ready to go at all times.

Sauces + dressings are the secret sauce that takes recipes to the next level, making salads, grain bowls, and dipping so much more exciting! This one's extra creamy with vegan mayo (but regular mayo works too). Plus, it's totally dairy-free + egg-free, like most of my sauce creations, so everyone can enjoy it. Personally, I want to drizzle it on everything! How To Make Creamy Carrot Ginger Dressing

With just a handful of simple ingredients and a quick blend in a good high-powered blender, you can create a rich + luscious creamy carrot dressing/sauce that's perfect for grain bowlssaladssandwiches, and much more! Trust me, once you try it, you'll wonder how you ever survived without it.

Ingredients

Carrot Ginger Dressing:

  • Vegan mayonnaise. I love using Follow Your Heart Veganaise. It is super creamy and smooth but feel free to add your fave if you prefer.
  • Carrot. Peeled + chopped. Provides natural sweetness + a vibrant yellow-orange color!
  • Almond milk. Helps to make the sauce creamier. You can use your fave plant-based milk. Learn how to make homemade almond milk!
  • Ginger root. Be sure to peel it (Use the top of a spoon it for easy peeling!)
  • Lemon juice. Freshly squeezed lemon juice is best!
  • Extra virgin olive oil. Gives the dressing an added touch of richness.
  • Pure maple syrup. This adds a little sweetness and helps balance out the flavors.
  • Garlic powder. A strong flavor that I love using for depth + umami flavor.
  • Black pepper + sea salt. Rounds out the flavors!

How To Best Peel Ginger?

Peeling ginger can be a bit tricky due to its awkward shape, but here's the best method I've found:

The Spoon Trick

This is one of the easiest methods. Simply scrape the edge of a spoon against the ginger's skin. The skin should come off easily, following the contours of the ginger.

Vegetable Peeler

Just like peeling carrots or potatoes, you can use a vegetable peeler to remove the skin from the ginger. This method allows for precise control and works well for larger pieces of ginger.

Freeze + Squeeze

Some people find it easier to peel ginger after it's been frozen. Simply place the ginger in the freezer for about 20-30 minutes, then use a spoon or knife to peel away the skin. The freezing process helps to loosen the skin, making it easier to remove.

Ingredients

DRESSING/SAUCE:

  • 1 medium carrot, peeled + chopped
  • ½ cup vegan mayonnaise
  • 3 Tbsps Almond milk
  • 1 ounce ginger root, peeled
  • 1 tablespoon freshly-squeezed lemon juice
  • 1 tablespoon pure maple syrup
  • 1 tablespoon Extra virgin olive oil
  • sea salt + black pepper, to taste

Instructions

TO MAKE THE DRESSING/SAUCE:

  • Add the vegan mayo, chopped carrot, ginger, Almond milk, lemon juice, maple syrup, olive oil, salt + black pepper, into a high-powdered blender and blend until sauce becomes creamy.
  • Add sauce/dressing to your favorite mason jar or tightly sealed container and refrigerate for 3-4 days for optimal freshness.

  • SERVING SIZE: This recipes makes enough for 2 servings, however, for more or a larger batch simply double or triple the ingredients.
