Ingredients

DRESSING/SAUCE:

  • 1 medium carrot, peeled + chopped
  • ½ cup vegan mayonnaise
  • 3 Tbsps Almond milk
  • 1 ounce ginger root, peeled
  • 1 tablespoon freshly-squeezed lemon juice
  • 1 tablespoon pure maple syrup
  • 1 tablespoon Extra virgin olive oil
  • sea salt + black pepper, to taste

Instructions

TO MAKE THE DRESSING/SAUCE:

  • Add the vegan mayo, chopped carrot, ginger, Almond milk, lemon juice, maple syrup, olive oil, salt + black pepper, into a high-powdered blender and blend until sauce becomes creamy.
  • Add sauce/dressing to your favorite mason jar or tightly sealed container and refrigerate for 3-4 days for optimal freshness.

Notes

  • SERVING SIZE: This recipes makes enough for 2 servings, however, for more or a larger batch simply double or triple the ingredients. 
  • CONSISTENCY (FOR A DRESSING): To make this more of a dressing for salads, etc. you can add more milk to make it more like a drizzle. I would add about ½ cup milk as a substitute for the original amount.
