This pasta recipe is as easy as can be – just boil the ravioli and whip up that creamy pumpkin sauce!

Ingredients

Here’s what you need to make this creamy fall-flavored pumpkin ravioli:

  • Organic Cheese Ravioli. (Feel free to use your favorite + see below for GF option)
  • Butter. Use unsalted butter to control the flavor of the dish.
  • Garlic. I recommend fresh, but you could use ½ teaspoon granulated garlic.
  • Vegetable stock. Use low-sodium store-bought or make your own.
  • Heavy cream. I recommend organic--always! I love the brand Organic Valley!
  • White wine. Choose a dry wine that you like the taste of or opt for more veg stock instead.
  • Pumpkin puree. Organic canned pumpkin puree (NOT pie filling) see below on how to make your own pumpkin puree.
  • Parmesan cheese. You could also use pecorino romano.
  • Tomato Paste. Adds that umami flavor!
  • Sundried tomatoes. I find the Wholefoods Organic jar to have lots of flavor and they use good quality olive oil!
  • Spices + seasonings. Sea salt, garlic powder, smoked paprika, dried oregano, dried basil, dried parsley + pinch of ground cinnamon.

  • Tomato sauce or paste
  • Fresh tomatoes

How to Make Your Own Pumpkin Puree

If you're thinking about making your own pumpkin puree instead of using a store-bought canned version, then you'll be happy to know that it is rather simple:

  • Step 1: Cut your pumpkins in half and scoop out the seeds. Be sure to save the seeds for another time because you can definitely use those!
  • Step 2: Feel free to cube the pumpkins into medium-large chunks and then place them unto a baking sheet lined with parchment paper. NOTE: ensure that the skin of pumpkin are peeled off at this point.
  • Step 3: Always season your pumpkin pieces (pinch of salt and cinnamon in this case for the recipe) and lightly grease with olive oil until coated.
  • Step 4: Roast in the oven at 375 degrees Fahrenheit for about 40-45 minutes or until the edges are golden and they become super tender once tested with a fork or knife.
  • Step 5: Using a food processor or blender, puree your pumpkin along with water or veggie stock, until smooth. You can either use this immediately in whatever pumpkin recipe you'd like, store it in the freezer for later use.

Traditionally, this dish is made with ravioli. However, if you can't find them or don't have any on hand, here are some other great options to consider-

I love using ravioli because they do a beautiful job of embracing and holding onto the sauce. But any of these pasta varieties would work for this dish -

  • Jumbo Rigatoni
  • Jumbo shells
  • Manicotti Tubes
  • Cannelloni
  • Penne
  • Paccheri
  • Orecchiette
  • Spirals
  • Gnocchi would also go wonderfully with this sauce combo!

What Type Of Pumpkin Puree Should I Use?

It must be noted that this recipe (and most sweet or savory pumpkin recipes) calls for 100% pumpkin puree, NOT pumpkin pie filling! Pumpkin pie filling is quite literally the sweet pumpkin custard that you find in traditional pumpkin pie. It already contains sugar, cinnamon, clove, and other ingredients that make a pie filling.

Adding pumpkin pie filling to a dish that calls for 100% pumpkin puree will add an un-welcomed sweetness, essentially ruining the dish. Even if you are unsure of what type of pumpkin a recipe is calling for, go for the 100% pumpkin puree. I love using the brand Libby's.

Whip up a delightful, creamy, and delicious weeknight dinner with our Cozy Sun-dried Tomato Pumpkin Ravioli recipe! This comforting vegetarian pasta is perfect for busy evenings, as it combines the convenience of a quick meal with irresistible flavors.

Ingredients

  • 1 (8 oz.) package organic cheese ravioli 

PUMPKIN SAUCE:

  • 3 Tbsps unsalted butter
  • 3 garlic cloves, minced
  • 1 cup organic heavy cream
  • 1 cup organic pumpkin puree (NOT pie filling)
  • 2 Tbsps organic tomato paste
  • 5-6 organic sundried tomatoes
  • ¼ cup organic vegetable stock
  • 2 Tbsps white cooking wine (You can also sub with veggie stock)
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • Pinch of ground cinnamon
  • ½ cup freshly-grated parmesan

OPTIONAL TOPPINGS:

  • Shaved parmesan
  • Crispy sage leaves
  • Pumpkin seed, toasted
  • handful of Homemade Croutons

Instructions

COOK THE PASTA:

  • Cook pasta according to packaging. NOTE: ravioli doesn’t take a long time to cook, usually 4-5 minutes, depending on brand.

TO MAKE THE CREAMY PUMPKIN SAUCE:

  • In a medium skillet over medium-high heat, add the butter and let it melt. Once melted, add the garlic cloves and sauté for 1 minute or so, until fragrant. Add in the salt, smoked paprika, garlic powder, oregano, basil, cinnamon, and parsley, and stir until combined. Add the tomato paste.
  • Reduce the heat to medium-low and slowly add in the heavy cream, veggie stock, pumpkin puree, sundried tomatoes, and white wine, stirring until combined. Let it slightly bubble for 1-2 minutes and then add in the grated parmesan, whisking until fully melted and sauce thickens, about 2-3 minutes.
  • When the ravioli is done, drain it and add it to the sauce, stirring until sauce fully coats + sticks to pasta. Serve immediately and top with your favorite toppings.

Tips & Tricks

  • STORAGE: Any leftovers can be kept in a tightly sealed container and refrigerated for up to 3-4 days.
  • PASTA: You can use long pastas like Pappardelle, Fettuccine, etc. however, I would recommend tossing with tongs to ensure that pasta is fully manageable and fully coated. Otherwise, other pastas such as Penne, Rigatoni, Paccheri, Orecchiette, etc. are perfect.
  • GREENS: To add a bit more flavor to this dish, you can always feel free to add in your favorite greens such as kale, spinach, broccolini, collards, or asparagus. 
  • MEAT OPTION: If you'd like to switch things up and aren't restrictive to non-meat, feel free to add chicken breasts, salmon, shrimp, or lobster to this pasta for extra decadence. 
  • GLUTEN-FREE: To make this dish GF, simply use Gluten-Free ravioli or pasta. Also ensure that veggie stock, heavy cream, and pumpkin puree are certified GF!
