can I use ground ( powder) ginger and turmeric instead of fresh? and if so how much of each?
Hi Veronica! Yes you can! The recipe already calls for turmeric powder, however, for ground ginger, you can start with 1 tsp and add additional, depending on the amount of ginger flavor desired. 🙂

This must call for something other than fresh ginger root, as 2-3 cups is beyond excessive. Perhaps 2-3 tsp?? You would only use 2-3 cups if you were making candied or preserved ginger...
Hi Linda! It's actually 2-3 cups! If preferred, you can always use less, however, since they are being boiled and discarded, for a burst of ginger flavor, you'll need at least 2 cups. 🙂
2-3 cups of chopped ginger seems excessive in a recipe for 4 people. Can you please explain?
Hi John! As noted in the recipe, you can add the amount of ginger depending on the amount of Ginger flavor desired. If you choose for less flavor, you can feel free to reduce the amount! 🙂
