These spuds are seriously addictive, with crispy edges and tender insides that'll have you reaching for seconds (and thirds). And that cheesy golden goodness of the parmesan crust? It's downright irresistible.

These crusted roasted potatoes are perfect for any occasion—whether as a sidesnack or game-day appetizer they're sure to steal the spotlight! They're irresistibly crispy + loaded with melted crispy parmesan. Plus, they're the ideal companion to so many meals and are loved by adults, kids + everyone in between!

How To Make Parmesan-Crusted Roasted Potatoes

Let's get started by prepping and cleaning those potatoes. Next up, mix melted butter and herbs together—yum! Now comes the fun part: dip each potato half into the buttery herb goodness, making sure it sticks. Arrange them on a baking sheet, cut side down, and pour any extra buttery goodness over the top. Pop 'em in the oven and bake for 25-30 minutes until they're nice and tender. Easy peasy, right?

Ingredients

POTATOES:

  • Gold potatoes. Cut into halves. I like to use small Yukon potatoes or similar ones.
  • Extra virgin olive oil. Feel free to use your favorite high-quality EVOO. My fave tried and trusted brand is California Olive Ranch.
  • Herbs + seasonings. Sea salt, black pepper, smoked paprika, Italian seasoning, garlic powder, onion powder + dried thyme.
  • Unsalted butter. Melted --- This is what is going to give the potatoes their perfect crispy outer. I love using organic butter from Organic Valley.
  • Parmesan cheese. The delicious cheesy star of the show. make sure it's freshly grated.

These are my top tips to make sure your Parmesan-Crusted Roasted Potatoes are as crisp as possible:

  • Cut the potatoes to equal sizes as much as possible. This way, they cook at the same rate. In this case, you’ll be cutting them rather large into halves.
  • Don’t be afraid to season well!
  • Let the oven come fully to a temperature before you add the potatoes to the oven. It needs to be a nice and hot environment.
  • Don't skimp on the parmesan!!! The parmesan cheese adds flavor and helps create a crispy crust, so be generous when coating the potatoes.
  • Serve immediately. For the crispiest results, serve the roasted potatoes immediately after they come out of the oven.

Dipping these potatoes is optional but if you like dipping like i do I highly recommend serving these potatoes with any of the following:

But if you want a little more, consider pairing them with these options:

  • Serve the potatoes alongside your favorite main course, such as chicken, steak, lamb or fish.
  • With breakfast: ---Serve the potatoes as a savory side dish with breakfast favorites like eggs + bacon.
  • Enjoy the potatoes alongside sandwiches or burgers.
  • Load 'em up --- Top the potatoes with all your favorite fixings like melted cheese, crispy bacon bits, and a dollop of sour cream.

Can I Air Fry Parmesan Crusted Potatoes?

Absolutely! While I initially made these fries in the oven, they're also a perfect fit for your air fryer. Air fryers tend to run hotter and offer better air circulation, so your homemade fries might need a slightly shorter cook time. To make cleanup a breeze and prevent sticking, I recommend lining the air fryer basket with baking paper before adding the potatoes. This will ensure easy cleaning and perfectly crispy results every time!

How to store?

Place any leftovers in a tightly sealed container in the refrigerator for 3-4 days. To reheat, add potatoes to a lined baking sheet and heat in the oven until warmed through. 

Can i use other types of potatoes?

Yup! For an extra kick, you can always substitute Yukon potatoes with baby red potatoes, sweet potatoes (sliced in rounds), etc.

Can i change up the spices used?

Yes of course. If desired, you can reduce the amounts slightly. Please know that this recipe is bold in flavor, so feel free to adjust based on your tastebuds.

Do I have to peel the potatoes?

It's up to you! Leaving the skins on adds extra texture and nutrients, but if you prefer peeled potatoes, feel free to peel them before slicing.

Ingredients

POTATOES:

  • 2 lbs. gold potatoes, cut into halves (I like to use small yukon potatoes or similar ones)
  • 2 Tbsps Extra virgin olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 4-6 Tbsps unsalted butter, melted
  • 1 cup freshly-grated parmesan cheese

Instructions

PREP + BAKE THE POTATOES:

  • Preheat your oven to 400 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper.
  • Thoroughly scrub and rinse the potatoes until clean and pat dry.
  • In a bowl, add the melted butter and herbs together, mixing until combined.
  • Take each potato half and dip the cut side into the butter-herb mixture, gently pressing it so that everything adheres. Arrange the potatoes on the baking sheet, coated-side facing down.
  • Drizzle any remaining butter-herb mixture atop the arrange potatoes.
  • Bake for 25-30 minutes or until the potatoes are tender. Once tender, remove from oven and let them cool for 2-3 minutes before adding them to a serving platter and serving immediately!
