How To Make My Favorite Buffalo Chicken Melt Sandwich

To put the sandwich together, start by slicing the ciabatta bread in half lengthwise. Then, mix the shredded chicken with buffalo sauce and honey until it's all coated nicely. Spread this mixture evenly onto the ciabatta halves. Pop them onto a baking sheet and bake until the bread's golden brown and the cheese is gooey and melted. Ingredients

BUFFALO CHICKEN:

  • Shredded chicken. See my easy shredded chicken recipe!
  • Buffalo sauce. Use your favorite, I like to use a premium buffalo sauce for the best flavor.
  • Raw honey. This adds the perfect pop of sweetness. You can sub with maple syrup or Agave.

MELT SANDWICH:

  • Loaf ciabatta bread. You can use your fave rustic bread or make my Vegan Everything Bagel Brioche Bread.
  • Kale. Chopped
  • Mozzarella cheese. Shredded or grated.
  • Sharp cheddar cheese. This adds such a nice umami cheesy flavor.
  • Butter. Unsalted + melted (You can also use olive oil, etc.)
  • Everything Bagel Seasoning. Either store-bought or you can make your own easy homemade everything seasoning (see below)

How To Make Everything Bagel Seasoning?

This homemade seasoning is a mix of six seeds + spices that just taste amazing together! We're talking toasted sesame seeds (both white and black), poppy seeds, dried onion and garlic flakes, and flaky sea salt. Just give it a mix and toss it into a jar—Voila! You've got it ready anytime you need to jazz up your dishes and snacks with a quick sprinkle!

Ingredients

  • White sesame seeds. I like to toast mine lightly in a pan for a more nutty flavor.
  • Black sesame seeds. An earthy flavor that adds depth + color
  • Poppy seeds. Adds a pop of texture.
  • Garlic powder. You can also use garlic granules or a mix of both.
  • Onion powder. If you want more texture you can use dried onion flakes also.
  • Sea salt. Flaky or chunky sea salt works best here.

To make this sandwich entirely GF, simply ensure that the bread is GF-Friendly as well as the buffalo sauce. 

Can i make this ahead of time?

While the sandwich is best enjoyed fresh, you can prepare certain components in advance to make assembly easier. For example, you can make + shred the chicken ahead of time and store it in the refrigerator until ready to use. Assemble the sandwich just before serving to maintain its freshness and texture!

Why wont my cheese melt?

It's so important to use shredded or freshly-grated cheeses for the "gooey" results. For even better results, I always recommend having your cheese at room temperature for an easier melt. But always remember that certain cheese melt easier than others like Mozzarella and Cheddar, which are often the go-to's!

Ingredients

BUFFALO CHICKEN:

  • 2 cups Easy Shredded Chicken
  • 2 cups buffalo sauce, premium
  • 2 Tbsps organic raw honey (You can sub with maple syrup or Agave)

MELT SANDWICH:

  • 1 loaf ciabatta bread (You can use your fave rustic bread or make my Vegan Everything Bagel Brioche Bread)
  • 2 cups organic kale, chopped
  • 1 cup shredded mozzarella cheese, organic
  • ½ cup shredded sharp cheddar cheese, organic
  • 2 Tbsps unsalted butter, melted (You can also use olive oil, etc.)
  • 1 tablespoon Everything Bagel Seasoning

Instructions

PREP THE BREAD:

  • Pre-heat the oven to 400 degrees Fahrenheit and prep a large baking sheet lined with foil paper.
  • Start by cutting the ciabatta bread in half lengthwise.

TO MAKE THE BUFFALO CHICKEN:

  • In a bowl add the Shredded Chicken, buffalo sauce, and honey together, stirring until combined and the chicken is fully coated.

ASSEMBLE + BAKE:

  • Place the two halves of bread onto the baking sheet with foil paper and on one half of the bread, evenly add the buffalo chicken, chopped kale, and cheeses until completely topped. Then top everything with the other half of the bread and lightly brush the melted butter atop the bread. Lightly sprinkle with the Everything Bagel seasoning and top the sandwich with another piece of foil paper, gently connecting both ends of the foil paper to tightly cover it.
  • Bake the sandwich covered with the foil for 20 minutes. Remove the top foil paper and bake for another 10 minutes or until the bread is golden and the cheese has melted.
  • Remove from the oven, cut in 1-2 inch slices (if desired), plate the sandwiches with your favorite side or chips and enjoy. NOTE: This sandwich tastes amazing with my Creamy Chipotle Dressing/Sauce!
