I've become totally hooked on crispy chickpeas lately! They're perfect for topping onto my fave dishes or just munching on as a crunchy snack! I have used them in recipes like Loaded Omelette with Chili-Spiced Chickpeas, Best Buffalo Chickpea Kale Salad, and even avocado toast. It's high time I share The Best Roasted Chickpeas recipe here. Trust me, they're insanely delicious + totally deserve their own moment in the spotlight!

I tried out a bunch of different seasonings, including my trusty homemade Italian seasoning, but the beauty of this recipe is that you can totally customize it to match your taste buds! This oven-roasted chickpeas recipe is super easy to make and turns out irresistibly crispy + crunchy. They're perfect for sprinkling onto grain bowls, creamy grits, and adding that extra crunch to soups and salads (seriously, they're amazing with cobb salad!). And besides being a great vegetarian protein source, they add a delicious crunch to ANY dish!

What Are Chickpeas?

For those of you who aren’t aware, another name for Chickpeas is Garbanzo Beans. They have been around for thousands of years and originate from the Middle East. Chickpeas have such a great texture and nutty flavor, which allows them to successfully pair well with a lot of other ingredients, especially in vegan and/or vegetarian recipes.

From creamy hummus to tasty curries and crispy falafel, chickpeas are a superstar ingredient that adds both fun and nutrition to your meals. Plus, they're a great source of protein, fiber, vitamins, and minerals.

How To Make The Best Roasted Chickpeas

Start by preheating your oven to 400 degrees Fahrenheit and lining a baking sheet with parchment paper. In a bowl, toss together the chickpeas with all the other ingredients until the chickpeas are fully coated. Spread the seasoned chickpeas onto the prepared baking sheet in a single layer for even roasting and crispiness. Check out more tips + tricks below.

Feel free to make it your own by using your favorite seasonings! You can also try out some of my homemade seasonings like lemon pepper, cajun, or blackened seasoning.

CHICKPEAS:

  • Organic chickpeas. The main ingredient. Be sure to rinse and dry your canned chickpeas.
  • Extra virgin olive oil: Adds richness + helps the seasonings stick to the chickpeas for roasting. Feel free to use your favorite high-quality EVOO. My fave tried and trusted brand is California Olive Ranch.
  • Seasonings. Sea salt, black pepper, garlic powder, onion powder, smoked paprika, Italian seasoning, dried parsley + cumin.
  • Red pepper flakes. Adds a touch of heat and adds a spicy kick to the roasted chickpeas.

Tips For The Crispiest Roasted Chickpeas

I have made ALOT of roasted chickpeas and here are some tips to ensure you get the crispiest roasted chickpeas:

  • Thoroughly dry the chickpeas!!! This is honestly the most important step. After rinsing them, pat the chickpeas dry with a clean kitchen towel or paper towels. Moisture on the chickpeas can prevent them from crisping up properly in the oven.
  • Use high heat. Preheat your oven to a high temperature, around 400°F. The hot oven helps to quickly crisp up the chickpeas.
  • Spread in a single layer. Arrange the seasoned chickpeas in a single layer on the baking sheet. Crowding the chickpeas can result in uneven cooking and less crispiness.
  • Avoid overcrowding. Use a large enough baking sheet or divide the chickpeas between multiple sheets to ensure they have enough space to roast evenly.
  • Enjoy them fresh! Roasted chickpeas are best enjoyed within a day or two of baking while they're still at their crispiest. If they lose their crunchiness, you can reheat them in a low oven for a few minutes to revive their texture.

If you want to go above and beyond you can remove the outer skins --- While optional, removing the outer skins of the chickpeas before seasoning can help them crisp up more effectively during roasting. Simply rub the chickpeas between your fingers to loosen the skins, then discard them.

Ingredients

CHICKPEAS:

  • 1 (15 oz.) can organic chickpeas, drained + rinsed
  • 1-2 Tbsps Extra virgin olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning, homemade or store-bought
  • 1 teaspoon dried parsley
  • ½ teaspoon cumin
  • ½ teaspoon red pepper flakes

Instructions

TO MAKE THE ROASTED CHICKPEAS:

  • Begin by preheating the oven to 400 degrees Fahrenheit and preparing a baking sheet with parchment paper.
  • In a bowl, add the chickpeas, olive oil, salt, black pepper, smoked paprika, Italian seasoning, garlic powder, onion powder, cumin, and red pepper flakes, stirring to combine and fully coat chickpeas.
  • Add the chickpeas onto the prepared baking sheet and arrange in a single layer so that they roast + crisp up evenly.
  • Bake chickpeas for 15-20 minutes or until chickpeas are crisp. Remove from oven.
  • Bon Appetit!
