I'm so hooked on this dish. It's really my easy go-to pasta recipe for those busy or lazy nights during the week where I don't want to compromise flavor, but want something to whip up quickly. Alfredo is one of the classic recipes that are timeless. Regardless of the season, you can always enjoy a good bowl of this creamy, flavorful pasta. And if you've ever been to Olive Garden, then you know that their Alfredo pasta comes highly recommended----so why not indulge at home, right? This Creamy Weeknight Alfredo Pasta is a rendition of one of my favorite sauces----Alfredo sauce and this recipe creates that creaminess and velvety texture that we all know and love. Plus, this Weeknight Creamy Chicken Alfredo is one to try next for sure!

OK, so traditionally, Alfredo pasta features fettuccine, which tends to be a bit thinner, but I wanted to fully enjoy everything with a nice soak up and switch up, which is why I went with Elicoidale. It is type of short cut pasta that really adds a nice twist to this dish. What is Elicoidale Pasta?

Elicoidale pasta is a type of short, tube-shaped pasta that’s very similar to rigatoni but with a slight twist in its ridges. This spiral-like design helps hold onto creamy sauces like Alfredo, making every bite flavorful and satisfying. Because of its sturdy shape and ridged texture, elicoidale is perfect for baked pasta dishes, hearty meat sauces, or rich, cheesy recipes where you want maximum sauce coverage.

What is Alfredo?

Basically, Alfredo is a creamy pan sauce made from butter and Parmigiano-Reggiano cheese. As it has become popular, there have been several adaptations and substitutes to the ingredients, however, either way-----Alfredo sauce is usually best when made + eaten right away! Classically, Alfredo is often paired with Fettuccine, but as you can see, I chose to use rigatoni and there are an array of other pastas that can be used.

How to Make Creamy Weeknight Alfredo Pasta

Start making this recipe by boiling your pasta. In the meantime, you make your creamy sauce by sautéing a few garlic cloves, and then adding in the seasoning, heavy cream, cream cheese, veggie or chicken stock, and cheese. Next, toss in your cooked + drained pasta and wallah. Very much a similar recipe to Olive Garden Chicken Alfredo.

Here’s what you need for this Creamy Weeknight Alfredo Pasta:

  • Extra virgin olive oil. Feel free to use your favorite high-quality EVOO. My fave tried and trusted brands are Brightland Co. and California Olive Ranch. You can also use avocado oil, coconut oil, or Grapeseed oil, if you prefer.
  • Homemade Alfredo Sauce. See the full recipe here--- or you can always use a premade one if you're short on time.
  • Short-cut pasta. Feel free to choose your fave! I used Elicoidale, however, you can substitute with ones like rigatoni, penne, farfalle or fusilli, and more!
  • Parmesan cheese. You could also use pecorino romano. For a dairy-free option, So Delicious Dairy-Free or Violife cheese shreds or parmesan tastes great.

  • Pecorino Romano. Slightly saltier and sharper than Parmesan, this sheep’s milk cheese adds a punchy, robust flavor.
  • Asiago. A milder, creamier cheese that blends well with Parmesan for a softer, richer Alfredo sauce.
  • Romano. A good substitute if you want a tangier bite with less nuttiness than Parmesan.

  • Use Freshly Grated Parmesan. Pre-shredded cheese often contains anti-caking agents that prevent smooth melting. Freshly grated Parmesan creates a silky, authentic Alfredo sauce.
  • Reserve Pasta Water. The starchy water helps thin and bind the sauce, creating a glossy, restaurant-quality texture that clings to every strand of pasta.
  • Don’t Overcook the Pasta. Cook pasta al dente since it will continue cooking slightly when tossed in the hot Alfredo sauce. Overcooking can lead to mushy pasta and a heavy dish.
  • Low and Slow Heat. When adding cheese and cream, keep the heat low to avoid curdling or separating the sauce. Stir continuously for a smooth, creamy consistency.

Here's the thing ---- This Creamy Alfredo Pasta is so delicious and flavorful that you can honestly enjoy it all by itself. Seriously, the sturdy, spiral-like shaped pasta + Alfredo sauce is everything! So, feel free to dig in and savor every single bite. It's a dish that stands tall on its own!

It’s important to thicken your Alfredo sauce so it gets nice and sticky. Personally, I love using arrowroot starch (which is a great gluten-free option) whenever my sauce doesn't come out nice and velvety as planned (which is rare with my Alfredo sauce recipe). However, if you don’t have this on hand, using other subs like all-purpose flour, regular cornstarch, or tapioca flour work just fine.

Just be sure to always stir your thickener with warm water until it becomes a ‘milky’ liquid before adding it to the sauce OR you can add the dry thickener to your skillet with the seasonings, right before adding the liquids, whisking until smooth and thickened.

How to Fix Alfredo Sauce (Creamy, Smooth, and Perfect Every Time)

Even the best Alfredo pasta can run into issues, but don’t worry—most problems are easy to fix. Here’s how to troubleshoot your sauce like a pro:

Sauce is Too Thin

  • Fix: Simmer the sauce a little longer to let it reduce and thicken naturally.
  • Quick Tip: Add a bit of cornstarch and water (1 tablespoon of each) or whisk in a bit more grated Parmesan to help it bind.

Sauce is Too Thick

  • Fix: Stir in small amounts of reserved pasta water, milk, or cream until it reaches the perfect creamy consistency.

Sauce is Grainy or Clumpy

  • Cause: Cheese was added at too high of a heat or pre-shredded cheese with fillers was used.
  • Fix: Remove the pan from heat and whisk vigorously. Next time, add freshly grated Parmesan slowly over low heat for a smoother sauce.

Sauce Broke or Separated

  • Cause: Overheating the cream or butter caused it to split.
  • Fix: Whisk in a tablespoon of cold cream or butter off heat to help emulsify and bring it back together.

Sauce Lacks Flavor

  • Fix: Adjust with a pinch of salt, black pepper, garlic powder, or a squeeze of lemon juice to brighten the flavors.

Quick and creamy, this Creamy Weeknight Alfredo Pasta is a 30-minute vegetarian dinner with rich, cheesy sauce—perfect for busy nights or Meatless Mondays.

Ingredients

WEEKNIGHT ALFREDO:

  • 1 lb. Your favorite short-cut pasta (I used Elicoidale)
  • 2 cups Homemade Alfredo Sauce
  • 3-4 Tbsps pasta water
  • Grated parmesan, for garnish

Instructions

BOIL THE PASTA:

  • Cook pasta according to packaging. NOTE: most short cut pastas cook about the same time as other pastas, usually 8-12 minutes, depending on brand.

TO MAKE THE CREAMY ALFREDO SAUCE:

  • See my Homemade Alfredo Sauce for ingredient list + measurements!
  • In a medium skillet over medium-high heat, add the butter until melted. Add the garlic cloves and sauté for 1 minute or so, until fragrant.
  • Reduce the heat to medium-low and slowly add in the heavy cream, and white cooking wine, stirring until combined. Let it slightly bubble for 1-2 minutes and then add in the grated parmesan and cheddar cheese (slowly adding them in batches), whisking until fully melted and sauce thickens, about 1-2 minutes. Add salt + black pepper to taste.
  • When the pasta is done, drain it (saving about 3-4 Tbsps of it for sauce) and add it to the sauce, tossing until sauce fully coats + sticks to pasta. Add the pasta water (starting with 2 Tbsps until creamy enough + adding more if needed). Add the pasta to prepare plate(s) or bowl(s) and top with additional grated parmesan, if desired. Serve immediately!

  • STORAGE: Any leftovers can be kept in a tightly sealed container and refrigerated for up to 3-4 days.   • PASTA: You can use long pastas like Pappardelle, Tagliatelle, Fettuccine, etc. however, I would recommend tossing with tongs to ensure that pasta is fully manageable and fully coated. Otherwise, other pastas such as Penne, Rigatoni, Paccheri, Orecchiette, etc. are perfect.
  • GREENS: To add a bit more flavor to this dish, you can always feel free to add in your favorite greens such as spinach, broccolini, collards, or asparagus.
