When it comes to chicken, I am the biggest fan possible. Honestly, I hardly ever eat red meats, but I do love seafood ever so often as well.
However, as I’ve mentioned, when it comes to chicken, it’s my go-to meat.
This recipe specifically was inspired by my love for one-pot dishes and of course, we always need a quick, easy meal that can be whipped together on those days when we’re extremely busy or perhaps tired. That’s why I created the Weeknight Meals category.
But the best part of this dish is definitely the flavor. While I hardly ever use Rosemary (especially as a main ingredient), I’m so happy that I did in this dish.
Personally, Rosemary has a super bold flavor that I’m not an extreme fan of, but this was SO GOOD!
Obviously, the maple flavor had something to do with that, in my opinion. Haha.
Nevertheless, I truly enjoyed the warm, herby flavor of this dish and if you’re into that, then you’ll enjoy it too.
Besides, this a delicious way to enjoy baked chicken instead of the plain ole’ way of making it.
Plus, the red potatoes and broccoli adds a nice balance to everything, especially flavor wise.

OK, so besides the fact that Rosemary is a super popular herb in cooking, I chose to use it for it’s health benefits as well.
Like we all know, Rosemary is an evergreen shrub that has need-like leaves and a woody aroma.
However, besides being popular in the cooking world, it is also used as a medicinal plant, especially in the use of rosemary oil.

Let’s dig into this recipe, shall we?
Preheat your oven to 375 degrees Fahrenheit and prepare a medium cast iron skillet, lightly greasing it.
Season chicken breasts and potatoes with seasonings and 1 Tbsp grapeseed oil in separate bowls and set aside so that they marinate slightly in the seasonings.
In the meantime, in a small saucepan on medium-high heat, melt the butter and add the maple syrup and rosemary, stirring until it becomes bubbly. Mixture should thicken in 1-2 minutes.
Now, arrange the red potatoes around the chicken breast (letting the chicken remain in the center) and remove the maple mixture from the heat and spoon HALF of it all over the chicken and potatoes.
Bake in the oven for 40-45 minutes (covered with foil), turning the breast over carefully to their opposite sides at the half-way mark. **NOTE: During this time, be sure to spoon the remaining maple mixture atop the chicken and potatoes again and bake WITHOUT foil.
Meanwhile, cook the broccoli in boiling water for 5 minutes, before draining it and adding it atop the chicken and potatoes to bake for the final 5 minutes or so just to get the flavor form everything.
Once done, remove from oven and serve immediately.
