Y'all after so many years of creating recipes for Orchids + Sweet Tea, I finally got around to sharing my pan-seared steak recipe. And you know what that means—time to spill the beans on My Fave Steak Seasoning [Dry Rub]! With summer in full swing and cookout season here, this blend of flavors like smoked paprika, rosemary, thyme, onion, garlic powder, and more is about to become your new go-to!

Steak dinners are a staple during the warmer months, and this seasoning takes them to the next level. But what's even better is that you can use it on practically anything—I'm talking chicken, lamb, even sides like fries! Speaking of sides.... my faves to to with steak a refreshing Smashed Cucumber Salad, a hearty Southern Potato Salad, and some perfectly roasted Brussels sprouts.

My steak dry rub seasoning is made with just a few basic pantry staples—nothing fancy, just deliciousness! I always whip up a big batch to have on hand for those spur-of-the-moment summer cookouts. Creating your own Homemade Steak Seasoning is as easy as bringing together all your spices and giving them a good mix! In just 5 minutes, you'll have a flavorful blend that's ready to elevate your dishes. Here's what you need:

HOMEMADE STEAK SEASONING:

  • Smoked paprika. Infuses a smoky undertone.
  • Sea salt. Enhances overall flavor.
  • Coarse black pepper. Provides a pungent, spicy element.
  • Garlic powder. Adds a savory kick.
  • Onion powder. Imparts a subtle, sweet onion flavor.
  • Brown sugar. For a hint of sweetness.
  • Cumin. A warm, aromatic essence to the blend.
  • Dried thyme + rosemary. Earthy, aromatic notes.

How Much Steak Seasoning Should I Use?

When it comes to seasoning steak, there's no exact science. Just sprinkle enough seasoning to cover both sides of the steak. Start with a light dusting, then add more if you like things extra flavorful. Trust your taste buds and adjust to your liking!

How To Season Steak With Dry Rub

Seasoning steak with a dry rub is easy-peasy! Here's a simple guide to get those flavors just right ---

Prep the steak --- Pat your steak dry with paper towels to remove any excess moisture. This helps the dry rub stick better to the meat.

Apply the rub --- Sprinkle the dry rub evenly over both sides of the steak. Use your hands to gently press the rub into the meat, ensuring it adheres well.

Let it Rest --- Once seasoned, let the steak sit at room temperature for about 30 minutes to allow the flavors to penetrate the meat. This also helps the steak cook more evenly.

Cook as Desired --- Grill, pan-sear, or broil the steak according to your preference. The dry rub will create a flavorful crust on the outside of the steak as it cooks.

Serve + enjoy --- Once cooked to your desired doneness, let the steak rest for a few minutes before slicing. Then, dig in and enjoy the deliciously seasoned steak

How Do You Know When Your Steak Is Ready?

While some prefer to rely on the "feel" of the steak over time, I personally choose not to take any chances. I prefer using a meat thermometer to ensure my steak is cooked exactly the way I like it! The internal temp guide is:

  • Medium Rare (soft, dark pink inside): 130°–135°
  • Medium (soft, some pink inside): 140°–145°
  • Medium Well (firm a little pink inside): 150°–155°
  • Well Done (very firm, no pink inside): 160°–165.

If you'd prefer more of a bolder smoky flavor, simply add another ½ teaspoon of smoked paprika to the mix.

Definitely! This recipe makes for about 2 servings worth of this seasoning blend. To make a larger batch, feel free to double or triple the ingredients.

How long will homemade steak seasoning last?

When stored in an airtight container in a cool, dry place, it can retain its flavor for up to 6 months.

Ingredients

STEAK SEASONING:

  • 3 Tbsps smoked paprika
  • 2 Tbsps sea salt
  • 2 Tbsps coarse black pepper
  • 2 Tbsps garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon organic brown sugar
  • 2 tsps cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

TO MAKE THE SEASONING BLEND:

  • In a bowl, mix together the smoked paprika, salt, black pepper, garlic powder, onion powder, brown sugar, cumin, thyme, and rosemary until combined.
  • Store seasoning blend in a tightly sealed mason jar or seasoning jar at room temperature.
