Herb Roasted Tomatoes [Quick + Easy]

Herb roasted tomatoes are quick and easy to make in the oven and deeply savory and full of umami flavor. They make a delicious side dish for summer BBQs and picnics, toast topper at breakfast, or snack all on their own.

Who doesn't love the start of tomato season? As soon as local heirloom tomatoes come in at the grocery store and farmer's market, I'm making Vegan Tomato Avocado Bruschetta, Creamy Roasted Garlic Tomato Soup, and Onion, Spinach, Tomato, + Parmesan Quiche. That's where these Herb Roasted Tomatoes [Quick + Easy] made directly in the oven comes in handy! Make these in batches and store in the refrigerator so that you can add them to your favorite dishes!

But for all of the other meals, when you just want to add a touch of tomato flavor, these herb roasted tomatoes are my go-to. They're easy to make and mostly hands-off, but the flavor is out of this world good. This is a simple recipe you'll want to return to all summer long.

Roasted Tomatoes; a Game-Changer

I like to roast my tomatoes in a hot oven until they blister and become sweet. The heat from the oven caramelizes the outside of the tomato and enhances its natural sugars, much like how caramelized onions become sweet after cooking.

Roasted tomatoes are also better seasoned than their plain tomato counterparts. When you roast the tomatoes, you first toss them in olive oil, salt, and pepper before they bake. That first step adds so much more flavor rather than making a sauce from plain raw tomatoes. Once the tomatoes are charred, it’s time to remove them from the oven.

What is the Difference between Fire Roasted Tomatoes and Regular Tomatoes?

Basically, the difference is that fire roasted tomatoes are charred (until blacked flakes form) over a flame, then diced and canned. This recipe can easily be turned into fire roasted tomatoes by heating your oven to 450 degrees and keeping them in the oven a bit longer until fully charred. In addition, you can omit the herb seasoning and just add garlic and onion powders for a more traditional taste.

How to Make Herb Oven Roasted Tomatoes

The key for this recipe is to start with great-quality tomatoes. Choose a mix of large and cherries, and several different colors if you can find them.

Ingredients

  • Tomatoes. You'll need about 2 lbs. of tomatoes for this recipe. Again, choose a mix of small, large and cherries or any other shape + kind of tomato you like.
  • Olive oil. Don't skimp on the oil! It helps concentrate the tomato flavor and makes a nice jammy texture. You can use these roasted tomatoes like a dressing or sauce.
  • Herbs + Seasonings. A great addition of flavor. Adds such savoriness from the salt, black pepper, smoked paprika, parsley, basil, oregano, red pepper flakes, thyme, etc.
  • Thyme sprigs. You can add rosemary leaves as a substitute as well.
  • Garlic. You'll need about 3 garlic cloves, mincing them into smaller pieces to help spread the flavor.

Serves: 6 servings

Ingredients

HERB + SEASONING BLEND:

  • 2 tsps sea salt
  • 2 tsps black pepper
  • 2 tsps garlic powder
  • 2 tsps smoked paprika
  • 2 tsps dried oregano
  • 2 tsps dried basil
  • 2 tsps dried parsley
  • 1 teaspoon dried rosemary
  • 1 teaspoon red pepper flakes

TOMATOES:

  • 2 lbs. smaller tomatoes (I like to mix grape + cherry tomatoes)
  • 2 Tbsps Extra virgin olive oil
  • 1 tablespoon Herb + seasoning blend (Adjust amount based on preference)
  • 4 fresh thyme sprigs
  • 3 garlic cloves, minced

Instructions

PREP + SEASON THE TOMATOES:

  • Cut your tomatoes into halves or leave a mix of whole and halved tomatoes. In a bowl, add the tomatoes along with olive oil and seasonings, mixing everything together until tomatoes are coated.

TO ROAST THE TOMATOES:

  • Preheat your oven to 400 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper.
  • Add the seasoned tomatoes unto the baking sheet (in a single layer) and add thyme sprigs and garlic cloves all around. Bake for 25-30 minutes or until tomatoes are charred, wilted, and tender. Remove and let cool slightly.
  • Add roasted tomatoes to your favorite pasta, salad, or as a side dish.

  1. Oh my God! I have now made these tomatoes too many times to count! They are so freaking good. I put them in anything that calls for tomatoes and it makes the food sing.     • Hi Merissa! OMG! I'm so thrilled that you've been loving this recipe! I definitely use them in SO many dishes also! They're such a nice touch! Personally, I haven't stored them in the freezer because I never have that much (haha), but I do believe that they work just as great frozen as other veggies. Plastic freezer bags work great to freeze leftover roasted tomatoes (once fully cooled). Make sure you push all of the air out before sealing to help them stay fresh. 🙂
