This vegan drink is the perfect way to warm up on a chilly afternoon. It’s sweet enough for dessert but also makes a delicious afternoon pick-me-up. This warming Dairy-Free Caramel Apple Cider is a warming cinnamon-spiced drink for fall with homemade cider and caramel sauce.
Heat the brown sugar in a medium skillet over medium-high heat and stir constantly using a rubber spatula until clumps are formed. Add vegan butter and continue to stir until everything has melted and become a dark 'amber-like' color. Continue to stir consistently until fully melted and bubbly, about 2-3 minutes.
Now, slowly whisk in the coconut milk and continue stirring until well incorporated and sauce has fully thickened. Remove from heat and allow to cool slightly before using. Set aside.
To serve, add 4 cups of homemade apple cider evenly into TWO 12 oz. cups or mason jar mugs and 1/4 cup of caramel sauce (in each), mixing it together until combined and the drink becomes a much lighter color. Top each drink with Coconut whipped cream, drizzle of caramel sauce, and pinches of cinnamon.

STORAGE (APPLE CIDER): Keep any leftovers in the refrigerator, tightly covered in your pitcher for up to 5 days. Can be frozen for up to 3 months and thawed in the refrigerator.
STORAGE (CARAMEL SAUCE): Leftover caramel sauce can be stored in a tightly sealed mason jar for up to two weeks. When ready to use, simply reheat sauce in the microwave at 15 second intervals until softened and at room temp.
