It’s been a crazy obsession of mine when it comes to homemade breads, especially breakfast ones.
Breakfast for me isn’t major so I always enjoy easy, quick meals that require the least amount of effort.

When it comes to both syrups, I often use them interchangeably, although I love to use pure maple syrup mostly. Agave is said to have a lower glycemic index, which makes it perfect for those with diabetes. On the other hand, pure Maple syrup has tons of antioxidants because it comes directly from a plant’s sap.
Now, let’s dig right into this recipe, shall we?
Begin by lining a loaf baking pan with parchment paper (leaving an end out on each side for an easy ‘pull-up’ and setting it aside. Preheat your oven to 375 degrees Fahrenheit!
In a small bowl, add the flaxseed meal and warm water, stirring it until combined and set aside. This creates the ‘flax eggs’.
In a large bowl, add the coconut oil, agave syrup, ‘flax eggs’, almond butter, vanilla, and Almond milk and whisk together until well combined.
Next, add in the flour, oats, baking powder, cinnamon, and sea salt. Mix together until well incorporated. **NOTE: Try not to OVER-MIX.**
Fold in the blueberries.
Carefully pour the batter into the prepared loaf pan, evenly spreading it. Gently place a few blueberries on top of batter (lightly pressing them in so they stay in place) and sprinkle top with oats.
Place your bread in the oven and bake for 55-60 minutes or until center is fully baked through (by testing center with a toothpick or knife and seeing if it comes out ‘clean’).
Once done, remove bread from the oven and let cool for 15 minutes or so.
Lifting the two sides of the parchment paper, gently remove bread from the loaf pan and onto a platter or dish.
To serve, slice, top with almond butter (optional) and enjoy.
