This Healthy Blueberry Oatmeal Breakfast Bread is the best 1-bowl breakfast bread with hearty oats, bursts of blueberries, and warm cinnamon notes! It so easy to make and makes for a great healthy alternative for a little sweetness in the morning for breakfast or even as a healthy snack. All vegan ingredients, entirely kid-friendly, and a gluten-free option available.

It’s been a crazy obsession of mine when it comes to homemade breads, especially breakfast ones.

Breakfast for me isn’t major so I always enjoy easy, quick meals that require the least amount of effort.

This Healthy Blueberry Oatmeal Breakfast bread does it well. Plus, the leftovers make for a great meal prep recipe for a few days throughout the week.

WHY I LOVE USING MAPLE SYRUP OR AGAVE AS A SWEETENER.

When it comes to both syrups, I often use them interchangeably, although I love to use pure maple syrup mostly. Agave is said to have a lower glycemic index, which makes it perfect for those with diabetes. On the other hand, pure Maple syrup has tons of antioxidants because it comes directly from a plant’s sap.

Now, let’s dig right into this recipe, shall we?

Begin by lining a loaf baking pan with parchment paper (leaving an end out on each side for an easy ‘pull-up’ and setting it aside. Preheat your oven to 375 degrees Fahrenheit!

In a small bowl, add the flaxseed meal and warm water, stirring it until combined and set aside. This creates the ‘flax eggs’.

In a large bowl, add the coconut oil, agave syrup, ‘flax eggs’, almond butter, vanilla, and Almond milk and whisk together until well combined.

Next, add in the flour, oats, baking powder, cinnamon, and sea salt. Mix together until well incorporated. **NOTE: Try not to OVER-MIX.**

Fold in the blueberries.

Carefully pour the batter into the prepared loaf pan, evenly spreading it. Gently place a few blueberries on top of batter (lightly pressing them in so they stay in place) and sprinkle top with oats.

Place your bread in the oven and bake for 55-60 minutes or until center is fully baked through (by testing center with a toothpick or knife and seeing if it comes out ‘clean’).

Once done, remove bread from the oven and let cool for 15 minutes or so.

Lifting the two sides of the parchment paper, gently remove bread from the loaf pan and onto a platter or dish.

To serve, slice, top with almond butter (optional) and enjoy.

Ingredients

  • 1 1/4 cups organic Artisan bread flour (I use Bob's Red Mills; See Notes!)
  • 1 1/4 cups Rolled oats, gluten-free (I use Bob's Red Mills)
  • 2 Tbsps flaxseed meal + 6 Tbsps WARM water
  • 2 tsps baking powder
  • 2 tsps ground cinnamon
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract
  • 1/4 cup almond butter (I use Justin's)
  • 2 Tbsps coconut oil (See Notes!)
  • 1/4 cup Agave syrup (I use Wholesome Sweets; See Notes!)
  • 1/4 cup Almond milk (I use Califia Farms; You can use your favorite plant-based milk)
  • 1 cup Blueberries, frozen or fresh (See Notes!)

Tips & Tricks

STORAGE: Refrigerate leftover bread by tightly wrapping it in foil paper or keeping it fully covered in a cake stand—lasts up to a week. Can also be stored at room temperature for up to 2-3 days.
SWEETENER: You can always use maple syrup, Vegan honey, or date syrup, date syrup or nectar as a substitute for maple syrup. For vegan honey—-Bee Free Honee, click link.
GLUTEN-FREE VERSION: To make this bread GF, I recommend using a GF Flour Blend (Bob’s Red Mills has a great version!). **NOTE: If the bread mixture is too ‘thin + runny’, simply add additional GF flour, 1/4 cup at a time.**
BLUEBERRIES: If using frozen blueberries, be sure to lightly toss them in 1 Tbsp or so in arrowroot starch or flour before folding them into the batter. This controls the moisture while cooking and ensures that muffins bake thoroughly through.
OIL: Instead of coconut oil, you can also use vegetable oil, if preferred.
MILK: You can use any plant-based milk for this recipe. I love using Califia Farm’s Almond Vanilla or Oats + Roasted Almonds Milk or So Delicious Dairy-Free’s Almond Milk, however, you can use Soy, regular Almond, Macadamia, Coconut, etc.
NUT BUTTER: If preferred, you can always substitute Almond butter with Peanut butter, SunButter (perfect for allergy-free needs!), Tahini (Sesame Seed Butter), Hazelnut Butter, etc.
