This Vegan Caramelized Peach Cinnamon Granola recipe is one of my newest favorites! Made with caramelized peaches, quinoa, gluten-free rolled oats, pecans, and spices; this recipe is a versatile way to add a handful of nutrients to your day--whether as a cereal in the morning, snack in between, or to top almost anything for an extra hint of summery peachy flavor. Super easy, entirely Gluten-free, Dairy-free, and Vegan.

One of the first recipes I ever attempted to make on my own was granola. I needed to use up the numerous nearly empty packages of nuts and seeds that I had stashed in my cupboard shelves, and I was sick of spending the money on the store-bought versions.

Spend a little time prepping, and you'll have a crispy, wholefood plant-based snack that's bursting with goodness. This homemade Vegan Caramelized Peach Cinnamon Granola is one of my favorite flavor combinations!

How to Make Vegan Caramelized Peach Cinnamon Granola

This healthy plant-based Vegan Caramelized Peach Cinnamon Granola recipe may just become your new go-to crunchy breakfast snack!

The first few steps of this recipe are a little bit more tedious than the rest. However, overall--this recipe is so easy to make! I know. Thank me later! This plant-based recipe is really, really easy to whip together and literally bakes itself on one baking sheet plus, it is full of tons of heart-healthy nutrients! 

INGREDIENTS

You only need a few simple ingredients to whip this together! There are two components the dry stuff and then the wet stuff - yummy sticky caramelized peaches and a few other goodies!

  • Gluten-Free Oats (I usually opt for organic). My favorite is from Bob's Red Mill
  • Multi-colored quinoa - Great for bulking up your granola and keeping it colorful.
  • Coconut oil - This will help bind everything together! 
  • Sweetener - My favorite to use is Maple Syrup. It really adds to the fall spices we use in this mix! (If you aren't vegan, honey can work too)
  • Nuts and seeds- Feel free to add whatever nuts and seeds to your granola that you enjoy! I like the combination of chopped pecans and chia sliced, but you can use any nuts or seeds you choose.
  • Cinnamon, Vanilla & Sea salt.
  • Peaches...But we will get to that shortly.

Let's Get Peachy! 

The most important element to this is, of course, the peaches! Your peaches will be baked and caramelized in the oven with the other sweet ingredients so they can develop a rich indulgent taste! They will then get blended and mixed with the dry ingredients to create the ultimate plant-based vegan granola! We are talking dreamy clustery chunky goodness! (Yup, I am drooling...)

Now, let's dig into this recipe.

Preheat your oven to 325 degrees Fahrenheit and line a baking sheet with parchment paper.

Now, add 2 Tbsps of coconut oil (it should be already melted since it's warm from the summer weather;  otherwise, melt first!) to a medium saucepan on medium-high heat. Add the diced peaches and sprinkle the brown sugar atop. Cook, frequently stirring with a rubber spatula, until peaches soften and mixture becomes bubbly and slightly thick.

Place the peach mixture carefully in the blender along with additional coconut oil, maple syrup, vanilla extract, and a pinch of sea salt. Blend on low speed until mixture becomes liquified.

In a large bowl, add the rolled oats, quinoa, chopped pecans, chia seeds, and cinnamon and stir together until well combined.

Carefully pour the blended peach mixture onto the dry ingredients and toss together using a spatula.

Once done, spread the mixture onto the prepared baking sheet and bake for 35-45 minutes, until everything has turned golden and dark brown.

How To Store Vegan Granola

This delicious stuff actually lasts for a while, so its worth the little bit of extra time and effort you put in. Of course, it depends on how much you eat per serving... And this stuff never lasts long in my kitchen. Once I start snacking, I can't stop myself!

This batch filled 2 medium mason jars, which allowed me to indulge in it a few times before it was all gone! So, if you want to make this ahead of time as meal prep, simply double the ingredient measurements to make a lot more, which ends up lasting longer. Win, WIN!

Serving Suggestions

Create a batch of this granola to keep on hand for breakfast and on-the-go snacks throughout the week. Although it is delicious on its own, it is even better when drenched with Creamy Homemade Oat Milk or homemade Coconut milk (or your own non-dairy fave!) OR eat on top of yogurt, muffins, breakfast toast, pancakes, or even ice cream! These plant-based granola clusters are also a lunchbox favorite for the little ones!

Tips For The PERFECT Vegan Granola

Okay, Drumroll...The key to perfect clustery granola is...

  • Avoid stirring or tossing at all costs!! No matter how tempting, hands off! In order to create clusters/chunks, you should bake it without touching them!!
  • Remove from oven and let cool for 20-30 minutes. Once cooled, gently break granola apart into medium/large clusters and chunks. (Yup, it's as simple as not touching it!)

Tips & Tricks

STORAGE: put leftover granola in airtight mason jars and/or containers and/or zip loc bags. Keep at room temperature for up to 5 days.

  1. I had some extra-ripe peaches sitting on my counter, so I decided to put them to good use! I love that this recipe is packed with extra goodies like quinoa and chia seeds, and uses maple syrup as one of the sweeteners. I think it would work out beautifully with nectarines, too (which are my favorite, tangy stone fruit). I baked for the full 45 minutes and let completely cool, which gave me perfect, crunchy clusters. Also, instead of putting the peach mixture into my blender, I just used my immersion blender in the pot-- worked like a charm. Will definitely make again!

  2. I made my own granola once and it tastes so much better than the stuff you get in the shops. I bet peach and cinnamon was a dreamy combination.

    • Yes, I'm now a huge fan of making my own granola! This is my second time making homemade granola, BUT the first one wasn't as amazing as this one, especially because of the Peach and Cinnamon flavor!
