I bet you've never thought that sweet potatoes would be perfect for breakfast! I know, I know. Me either. BUT they are, ya'll! OK, so I understand that sweet potatoes are a THING and will always be a thing, especially when they're stuffed. But these Sweet Potato Berry Breakfast Boats are certainly one of the things that you need to try! Besides, you can literally have sweet potato any way you please-----think sweet potato waffles/pancakes, maybe a hash brown or two, or maybe even breakfast fries. The possibility are endless! And to top things off for dessert---this 1-Layer Maple Sweet Potato Cake is one for the books! When it comes to this Blender Maple Sweet Potato Pie, it is smooth, velvety, full of sweet potato + spices flavor and is housed with a buttery, flaky crust.

The Best Thing About Sweet Potato Boats

Now back to this recipe. So, many of you may attest to the wonderfulness of sweet potato breakfast boats like I have, however, there still may be a few of you who might say, "eehhh, NO!". I get it. It's nothing new and while the original recipe for these were during the time that sweet potato boats were a new phenomenon, these boats are still just as interesting. They can be different. And they're GOOD too!

The toppings are certainly endless, but I chose to use fresh berries atop my sweet potato boats because of the slight tartness/sweetness balance, which would compliment the remaining ingredients very well. Plus, they're easy to prep and can be adjusted and substituted based on your own personal preference.

And the peanut butter or almond butter was a perfect addition because it added a nice nutty flavor. Oh and let's not forget the granola which were a nice crunch! PERFECTION all around---trust me.

Meal Prep Stuffed Sweet Potatoes

This Sweet Potato Berry Breakfast Boats recipe is great for vegan meal prep! You can make the roasted sweet potatoes and add the other ingredients into individual containers and store them in an airtight container for up to four days. When you're ready to eat, simply pop the sweet potatoes into the oven or microwave to heat. Then top with your favorite prepped toppings and wallah!

How to Make Sweet Potato Berry Breakfast Boats

If these photos have you ready to get in the kitchen, then you're in good company, especially since these Sweet Potato Berry Breakfast Boats are super easy to make and only require a handful of ingredients:

INGREDIENTS

Here's what you need to bring these Sweet Potato Berry Breakfast Boats to life for your breakfast, brunch, or snack situation:

  • Sweet potatoes. You'll need about 4 medium-sized sweet potatoes, about 1 lb. each. I like to wash the outsides and pat dry, then poke holes all around each potato so that they bake through easily.
  • Fresh berries. To compliment the sweetness of the potatoes, fresh blackberries, blueberries, and strawberries are the best! You can also add raspberries if desired.
  • Maple syrup. Use pure syrup, not imitation or pancake syrup.
  • Olive oil. You can also use avocado oil, coconut, or Grapeseed oil, if you prefer.
  • Spices. I love a combination of cinnamon and nutmeg to go with the sweet potato flavor.
  • Peanut butter. Use organic, smooth peanut butter to ensure that it's vegan. You can also use your favorite nut butter like almond, sunbutter, etc.
  • Granola. You can use a great store-bought brand like Purely Elizabeth or make your own!
  • Yogurt. You'll need dairy-free vanilla yogurt of your choice. Personally, I love using So Delicious Dairy-Free.

How Long Can Cooked Sweet Potato Sit Out?

According to research, it's recommended that you don't leave cooked sweet potatoes out for more than 2 hours as this can promote bacterial growth. Therefore, if you aren't serving your sweet potato breakfast boats right away, be sure to let it cool and then refrigerate it until ready. You can easily reheat it in the oven when serving for that nice warm experience.

Switch things up in the morning with these delicious Sweet Potato Berry Breakfast Boats! The perfect healthy option for the entire family.

Serves: 4 servings

Ingredients

SWEET POTATOES:

  • 4 medium sweet potatoes, rinsed + pat dry (About 1 lb. each)
  • 2 Tbsps Extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

TOPPINGS:

  • 1 cup fresh blackberries, organic
  • 1 cup fresh blueberries, organic
  • 1 cup fresh organic strawberries, halved
  • 1 cup Your favorite granola, homemade or storebought
  • 2 Tbsps organic peanut butter or almond butter, softened (optional)
  • 1 cup dairy-free vanilla yogurt
  • Drizzle of pure maple syrup

Instructions

TO ROAST SWEET POTATOES:

  • Begin by preheating the oven to 400 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper.
  • Add the sweet potatoes unto the baking sheet (side by side), poke holes in each one, drizzle with olive oil and bake for 35-40 minutes or until sweet potatoes are tender and can easily be tested with a knife or toothpick. Remove from oven and let cool slightly.
  • Once cooled enough to handle, carefully slice them open (without cutting all the way down to the bottoms). Using a fork, lightly fluff the insides sweet potato until somewhat "mashed" and sprinkle with cinnamon and nutmeg.

ADD THE TOPPINGS:

  • To serve, add each roasted sweet potato unto a platter (or individual plates) and top with spoonfuls of fresh blueberries, blackberries, strawberries, granola, yogurt, nut butter (if using), and drizzles of maple syrup, if desired.
