This No-Churn Vanilla Ice Cream + Rainbow Sprinkles recipe is a childhood favorite that never gets old. Like any highly coveted Mr. Softy treat, this ice cream is creamy, smooth, filled with vanilla flavor, and is made with just THREE ingredients and in less than 10 minutes, before letting the freezer do the rest! Topped with tasty rainbow sprinkles, this recipe is perfect for your family.

It’s FRIYAY! WOOT, woot!

Now that the week has come to a close and the weekend is fast approaching, in addition to it being the 3rd day in August, I am excited!

This week has been a really busy one for me between work, a toddler, self-care, the household, and a few appointments, so the weekend is a nice end.

At least it’s the time that I can spend the most time with my two favorite guys, since my husband isn’t as engulfed in work as he is during the week.

But I do have a bit of work this weekend along with a few recipes to test out, so it’ll be a little busy on my end either way. Haha.

In the midst of being so busy, lately I’ve come to the realization that self-care is super important. For the past few months, I haven’t been doing amazing (health wise) and in my struggle, I’ve learned that being well requires real intention.

Not only does it require that you be intentional in what you eat, but also in your physical and mental health.

Even the simplest activities and efforts can make a real impact, so never discount those moments.

Now, I’ve vowed to myself to take the necessary time and effort in my eating to ensure that I am my healthiest and best self.

One of the ways I’ve done so lately, has been by spending time every day meditating and listening to Christian Sermons and music.

Before, I’ve done this, however, lately I’ve made it a mission to spend a designated amount of time doing this while I work, etc. EVERYDAY! Mentally, this keeps me grounded, connected to God, and positive.

Physically, I’ve made it a mission to begin Yoga once again and sticking to it. The great thing is that it also helps with stress as well, much like exercise.

Another big thing for me has been making more memories with my little guy, which has been amazing so far!

Even in the little things, I’ve found myself feeling much happier and enriched when I see his smile and get a chance to enjoy his witty personality.

Ok, so let’s dig right into something sweeter—–ICE CREAM!

I’ve enjoyed making no-churn ice cream for some time and haven’t looked back ever since! It’s such an easy process and it gives you the ability to customize the flavors to your own liking.

Granted, I am planning on purchasing an Ice Cream maker very soon because I’d love to test out some of this creamy goodness from a high-powered machine, however, this no-churn method never disappoints.

So many bold flavors, right?

Well, I decided to keep this recipe fairly simple because it’s based on my childhood favorite! I can still remember my Grandfather taking me to our favorite ice cream spot (which had the best by the way!) once a week and I always getting a Vanilla Ice cream with sprinkles and him getting the same (minus the sprinkles!).

This is one of my fondest memories of him and I still enjoy this combination to this day! So, while it’s simple, it’s super meaningful to me!

Let’s begin, shall we?

  1. In the bowl of an electric mixer, whisk together the heavy whipping cream and vanilla extract on high speed for about 5 minutes until fluffy and stiff peaks form.

  2. Next fold in the sweetened condensed milk and maple syrup with a spatula until well incorporated. If you’d prefer a bolder vanilla flavor, simply add the insides of 1 vanilla bean to the mixture and fold in well.

  3. Pour mixture into a 9×5 loaf pan and cover tightly with plastic wrap and freeze for 4-6 hours.

  4. To serve, remove from freezer and scoop ice cream in prepared cups (or a cone if preferred), topping it with rainbow sprinkles. Wallah!

No-Churn Vanilla Ice Cream + Rainbow Sprinkles

Ingredients

  • 2 cups organic heavy whipping cream, cold (I use Organic Valley)
  • 1 (14 oz.) can sweetened condensed milk, low-fat (I use the Eagle's brand)
  • 1 Tbsp pure maple syrup, to sweeten (See Notes!)
  • 1 Tbsp vanilla exract
  • 1 stick vanilla bean, optional (For bolder vanilla flavor!)
  • 1 cup Rainbow sprinkles

Instructions

  • In the bowl of an electric mixer, whisk together the heavy whipping cream and vanilla extract on high speed for about 5 minutes until fluffy and stiff peaks form.
  • Next fold in the sweetened condensed milk and maple syrup with a spatula until well incorporated. If you'd prefer a bolder vanilla flavor, simply add the insides of 1 vanilla bean to the mixture and fold in well.
  • Pour into a 9x5 loaf pan (or small metal bowl) and freeze for 4-6 hours. 
  • To serve, remove from freezer and let sit for a couple of minutes to soften slightly and enjoy! Add rainbow sprinkles as garnish for some real fun!

Tips & Tricks

SWEETENER: If you choose to opt out of pure maple syrup, you can always substitute with Agave as well.
STORAGE: When kept in an air-tight container, ice cream lasts for about 2 weeks.

    • Hi Pravina! Are you referring to the heavy cream? If so, I usually whisk it in an Electric Mixer for a few minutes and it usually comes up like fluff, which gets folded with everything else. 🙂
