Now that the week has come to a close and the weekend is fast approaching, in addition to it being the 3rd day in August, I am excited!
This week has been a really busy one for me between work, a toddler, self-care, the household, and a few appointments, so the weekend is a nice end.

Not only does it require that you be intentional in what you eat, but also in your physical and mental health.

Now, I’ve vowed to myself to take the necessary time and effort in my eating to ensure that I am my healthiest and best self.
One of the ways I’ve done so lately, has been by spending time every day meditating and listening to Christian Sermons and music.
Before, I’ve done this, however, lately I’ve made it a mission to spend a designated amount of time doing this while I work, etc. EVERYDAY! Mentally, this keeps me grounded, connected to God, and positive.
Physically, I’ve made it a mission to begin Yoga once again and sticking to it. The great thing is that it also helps with stress as well, much like exercise.
Another big thing for me has been making more memories with my little guy, which has been amazing so far!
Even in the little things, I’ve found myself feeling much happier and enriched when I see his smile and get a chance to enjoy his witty personality.
Overall, self-care can seem a far off for many of you and sometimes a bit impossible with your schedule, however, it’s so important to do.

Ok, so let’s dig right into something sweeter—–ICE CREAM!
I’ve enjoyed making no-churn ice cream for some time and haven’t looked back ever since! It’s such an easy process and it gives you the ability to customize the flavors to your own liking.
Granted, I am planning on purchasing an Ice Cream maker very soon because I’d love to test out some of this creamy goodness from a high-powered machine, however, this no-churn method never disappoints.

Well, I decided to keep this recipe fairly simple because it’s based on my childhood favorite! I can still remember my Grandfather taking me to our favorite ice cream spot (which had the best by the way!) once a week and I always getting a Vanilla Ice cream with sprinkles and him getting the same (minus the sprinkles!).
This is one of my fondest memories of him and I still enjoy this combination to this day! So, while it’s simple, it’s super meaningful to me!

In the bowl of an electric mixer, whisk together the heavy whipping cream and vanilla extract on high speed for about 5 minutes until fluffy and stiff peaks form.
Next fold in the sweetened condensed milk and maple syrup with a spatula until well incorporated. If you’d prefer a bolder vanilla flavor, simply add the insides of 1 vanilla bean to the mixture and fold in well.
Pour mixture into a 9×5 loaf pan and cover tightly with plastic wrap and freeze for 4-6 hours.
To serve, remove from freezer and scoop ice cream in prepared cups (or a cone if preferred), topping it with rainbow sprinkles. Wallah!
