These Thick + Fluffy Sweet Potato Pancakes are healthy, dairy-free, and are the perfect way to kick-start your day. Whether you want an awesome seasonal flavor or just something sweetly homemade, this recipe makes for a great breakfast or brunch dish in just 25 minutes–total.

Happy Wednesday, Friends! Aren’t you happy we’re midway into the week?

Oh and it’s Hump Day, too. So, Happy Hump Day and Wellness Wednesday and everything in between. Haha!

How are you spending your Wednesday? I’m still thinking about these Very Berry Sweet Puff Pastries and this Gooey Banana Monkey Bread with Strawberry Saucewhich surely satisfied our sweet tooth.

But the best part of this week is sharing these sweet potato pancakes! I’m super excited because these pancakes are SO GOOD! Yum! Much like these Vegan Banana Pancakesthese pancakes are light, fluffy, and thick!

I don’t know about you guys, but I love thick pancakes. Of course, they can’t be overly thick to the point that they aren’t still light and fluffy.

Personally, I find that thicker pancakes and waffles soak up the maple flavor nicely. Haha!

Thick + Fluffy Sweet Potato Pancakes

If you’re a real die-hard fan of sweet potatoes like I am, then these Loaded Spinach, Bacon, Egg, + Cheese Sweet Potato Boats would be the perfect addition to your plates, meal prep for the week ahead, or even to enjoy for brunch.

Oh and since Sweet Potatoes are the topic of conversation when it comes to the recipe, DID YOU KNOW that they are really great at:

  • Improving digestion

They actually contain more fiber than regular potatoes! Who knew? Plus, they are good sources of magnesium, which is what helps aid them in being a great facilitator in digestion.

  • Boost Your Immune System

Since they are rich in beta-carotone (a major antioxidant), they are awesome at defending your body from a wide variety of issues. In addition, they contain other great antioxidants which include: Vitamin C and B-complex, iron, and phosphorous.

  • Treat Stomach Ulcers

Yes, that’s right! Sweet Potatoes are great at soothing the stomach and intestines. The previous listed vitamins that help to boost your immune system also are great at curing stomach ulcers. Plus, the roughage in sweet potatoes help to combat constipation and acid formation, which both help to reduce the chances of ulcers.

  • Other Benefits: They help to treat inflammations, promote weight gain, treat bronchitis,  reduce arthritis pain, and more.

Thick + Fluffy Sweet Potato Pancakes

Now time for the recipe. 

  1. Start by whisking together the organic all-purpose flour, whole wheat flour, baking powder, cinnamon, and sea salt in a large bowl and set aside. 

  2. In a separate bowl, add the sweet potato puree, eggs, vegetable oil, coconut milk, and maple syrup and whisk together until well combined. Add the apple cider vinegar and mix together well again.

  3. Now, add the wet ingredients in with the dry ingredients and stir together with a spatula until well combined. **Try not to Over-mix.**

  4. Add a thin slice of butter to a heated medium skillet and pour 1/3 cup of batter unto the surface of the skillet. Cook for about 1-2 minutes (until batter begins to bubble) and gently flip pancake to it’s opposite side, cooking another 1-2 minutes. Be sure to gently press down on pancake to ensure that center cooks through.

  5. Once cooked and lightly brown, remove pancake from heat and repeat steps until all batter is used.

  6. To serve, stack pancakes onto one another and add 1 Tbsp of peanut butter, sliced bananas, pumpkin/grain granola atop and lightly drizzle with maple syrup, if desired.

Ingredients

  • 1 1/2 cups organic all-purpose flour (I use Bob's Red Mill)
  • 1/2 cup organic whole wheat flour (I use Bob's Red Mill)
  • 1-1 1/2 cups pureed sweet potato (About 2 medium potatoes; See Notes!)
  • 2 large organic eggs, room temp.
  • 1 cup Coconut Milk, unsweetened (You can use your fave plant-based milk!)
  • 1/4 cup pure maple syrup
  • 1 Tbsp vegetable oil (See Notes!)
  • 2 Tbsps apple cider vinegar (See Notes!)
  • 1 Tbsp ground cinnamon
  • 2 tsps baking powder
  • pinch of sea salt

Toppings:

  • 2 Tbsps organic peanut butter (I use Justin's)
  • sliced bananas (About 1 Medium Banana)
  • handful of granola (I use Purely Elizabeth's)
  • pure maple syrup

Tips & Tricks

SWEET POTATOES: Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper or foil. Rinse sweet potato and pat dry. Lightly coat potato with Extra Virgin Olive Oil and place in oven, baking for 45 minutes to 1 hour, until tender and juices begin to bubble outside of skin. Remove from oven, let cool for 10-15 minutes and slice in half. Remove sweet potato insides and place in a bowl, mashing it until “pureed”. Continue recipe.
SWEETENER: If you choose to opt out of pure maple syrup, you can always substitute with Agave as well.
OIL: Instead of coconut oil, you can also use vegetable oil, if preferred.
APPLE CIDER VINEGAR: Instead of using apple cider vinegar, you can substitute with lemon juice.
