Ingredients

BUNDT CAKE:

  • 1 cup salted butter, softened at room temp.
  • 3 cups organic all-purpose flour
  • 1 ½ cups organic cane sugar
  • 1 teaspoon baking powder
  • 1 teaspoon apple pie spice
  • 2 tsps vanilla extract
  • 4 large organic eggs, at room temp.
  • 1 cup unsweetened Almond milk, at room temp. (You can use whole milk or your fave plant-based milk)

SAUTEED APPLE TOPPING:

  • 2-3 cups organic apples, diced (That's about 2 apples; See FAQ for types of apples that can be used)
  • 2 Tbsps salted butter
  • ¼ cup organic brown sugar
  • 1 ½ tsps apple pie spice (See Notes for homemade option)
  • 1 teaspoon vanilla extract

SIMPLE SPICED GLAZE:

  • 2 cups organic powdered sugar, sifted
  • 1 teaspoon apple pie spice
  • 3-4 Tbsps unsweetened Almond milk

Instructions

TO MAKE THE SAUTEED APPLE TOPPING:

  • In a medium (10-inch) skillet over medium-high heat, add the butter and heat until melted. Add the brown sugar, apple pie spice, and vanilla and stir until combined and everything begins to bubble a bit, about 1-2 minutes.
  • Add the diced apples and toss until well coated and cook for another 3-4 minutes, until tender and the sauce has thickened. Remove from heat. Cool completely!

TO MAKE THE BUNDT CAKE:

  • Begin by preheating the oven to 375 degrees Fahrenheit. Lightly grease (with butter or oil) and LIGHTLY flour a standard Bundt cake pan.
  • In a large bowl, whisk together the flour, baking powder, and apple pie spice until combined. Set aside.
  • In a bowl, add the softened butter and sugar, beating them together using a hand-mixer (on high-speed), until pale and fluffy, about 2-3 minutes.
  • Add in the eggs (one at a time), vanilla, and the milk, followed by the dry ingredients, mixing everything together until well combined, smooth, and lump-free, about 2-3 minutes. NOTE: The batter should be thick, yet easy to stir.

ASSEMBLE + BAKE THE CAKE:

  • In the prepared bundt cake pan, spoon the cooled sautéed apple topping until evenly spread and scoop the cake batter atop everything, evenly spreading the batter. Bake for 45 minutes to 1 hour, or until a toothpick or butter knife comes out clean when tested all around the cake.

  • In a bowl, whisk together the powdered sugar, apple pie spice, and milk until smooth and it forms a glaze-like consistency.
  • Once the cake has cooled completely and is on the cake stand or dish of your choice, generously drizzle the spiced glaze atop the entire cake.
