Ingredients

ROASTED FRUIT:

  • 2 medium D’Anjou pears, sliced (skin on)
  • 1 orange, sliced (skin on)
  • 1 tablespoon extra virgin olive oil
  • ¼ cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground allspice

MOCKTAILS:

  • 2 cups filtered water
  • 1 orange, freshly-squeezed
  • 2 Tbsps pure maple syrup
  • pinch of ground cinnamon
  • ginger beer, for topping
  • Rosemary sprigs, optional

Instructions

TO ROAST FRUIT:

  • Arrange a rack in the middle of the oven and heat the oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.
  • In a bowl, add the maple syrup, olive oil, ground cinnamon, nutmeg, and allspice, mixing everything together until combined. Add in the sliced pears and oranges, tossing them together until fruit are coated.
  • Transfer to the baking sheet and arrange in the single layer and bake until the fruit is golden-brown and knife tender, 15 to 20 minutes. Remove from oven.

TO MAKE THE MOCKTAILS:

  • In a bowl, mix together the water, orange juice, maple syrup, and cinnamon.
  • ASSEMBLY: For each drink, fill an 8-ounce glass halfway with crushed ice. Add ½ cup of the mocktail mixture. Garnish with sliced oranges and pears, and top with ginger beer until filled completely. Add a rosemary sprig if desired.
  • Sip and Enjoy!

Notes

  • SWEETENER: Instead of maple syrup, you can substitute with Agave syrup.
  • MAKE AHEAD: You can make the mocktail mixture up to 1 day ahead and refrigerate in an airtight container. The day off, simply roast fruit and assemble.
