No-Bake Matcha Green Tea Energy Bites
These No-Bake Matcha Green Tea Energy Bites are a delicious blend of green tea and the slightly nutty flavor of pistachios. Super easy to make, a great way to increase your energy levels to kick start your morning, and did I mention, they are GOOD? Yum.

- ½ cup pistachios de-shelled
- ½ cup rolled oats
- 2 Tbsps chia seeds
- 1 teaspoon Matcha Green Tea powder I used Kiss Me Organics brand
- 1 teaspoon vanilla extract
- pinch sea salt
- 2 Tbsps organic maple syrup
- ¼ cup white chocolate
Add rolled oats, white chocolate, and pistachios to a food processor and pulse 3-4 times or until mixture is grinned into small pieces.
In a small bowl, add grinned ingredients with remaining ingredients and mix until well combined.
Cover bowl with plastic wrap and place in freezer for 20-30 minutes.
Once hardened, use your hands to roll into a ball, set aside and repeat until complete.
Allow to set in the freezer for another 10-15 minutes before eating!
