No-Bake Matcha Green Tea Energy Bites

These No-Bake Matcha Green Tea Energy Bites are a delicious blend of green tea and the slightly nutty flavor of pistachios. Super easy to make, a great way to increase your energy levels to kick start your morning, and did I mention, they are GOOD? Yum.

Must-Haves:

  • 1/2 cup pistachios de-shelled
  • 1/2 cup rolled oats
  • 2 Tbsps chia seeds
  • 1 tsp Matcha Green Tea powder I used Kiss Me Organics brand
  • 1 tsp vanilla extract
  • pinch sea salt
  • 2 Tbsps organic maple syrup
  • 1/4 cup white chocolate

Instructions:

  1. Add rolled oats, white chocolate, and pistachios to a food processor and pulse 3-4 times or until mixture is grinned into small pieces. 

  2. In a small bowl, add grinned ingredients with remaining ingredients and mix until well combined. 

  3. Cover bowl with plastic wrap and place in freezer for 20-30 minutes.

  4. Once hardened, use your hands to roll into a ball, set aside and repeat until complete. 

  5. Allow to set in the freezer for another 10-15 minutes before eating!
