Ingredients

STRAWBERRY SIMPLE SYRUP:

  • 1 cup sliced fresh strawberries
  • ½ cup water
  • ½ cup organic cane sugar

MANGO PUREE:

  • 8 oz. mango chunks (That's about 1 ripe mango, peeled + cubed)
  • 1 cup water
  • ½ lemon, freshly-squeezed

MOCKTAIL:

  • ½ cup mango puree, divded
  • ½ cup cooled strawberry simple syrup
  • 4 oz. whiskey alternative
  • Crushed ice or ice cubes
  • Club soda, for topping (I love using Olipop's Lemon-Lime soda)
  • Fresh rosemary or thyme sprigs, for garnish
  • Sliced fresh strawberries, for garnish

Instructions

TO MAKE THE STRAWBERRY SIMPLE SYRUP:

  • In a saucepan over medium-high heat, add together the sliced strawberries, water and sugar (stirring them to combine) and bring to a boil, about 1-2 minutes.
  • Reduce the heat to low and simmer for another 2-3 minutes or so. Remove from heat and let it cool completely.

TO MAKE THE MANGO PUREE:

  • Add the mango chunks to a high-powered blender along with the water and freshly-squeeze lemon juice, and blend on high-speed until smooth, about 2-3 minutes.

TO MAKE THE MOCKTAILS:

  • In a cocktail shaker, add the cooled strawberry simple syrup and Ritual Zero Proof Whiskey Alternative (if using), shaking it together until combined. NOTE: You can also whisk everything together in a bowl if it's easier. If you're not using the Alcohol Alternative, then just shake together the juices + simple syrup.
  • ASSEMBLY: Add the prepared ice cubes (or ice) to a glass(es) then add the mango puree (divided equally), followed by the mocktail mixture until ¾ filled and top with club soda. For additional garnish, add the fresh rosemary or thyme sprigs and sliced strawberries, if desired. Repeat for every serving.
  • Sip and Enjoy!

Notes

  • SERVINGS: To make additional mocktails, simply double or triple ingredients, depending on need.
  • ALCOHOL: If you'd like to spruce things up with alcohol, feel free to add 2 ounces of whiskey, rum, vodka, etc.
