Ingredients

SIMPLE SYRUP:

  • ½ cup water
  • ¼ cup organic cane sugar

MOCKTAIL:

  • ½ cup cubed frozen fragonfruit
  • ½ cup cooled simple syrup
  • 4 limes, freshly-squeezed
  • ¼ cup organic pineapple juice
  • 2 ounces Vodka alternative, optional (I love to use Ritual Zero Proof)
  • Lemon Lime soda, for topping (I love to use Olipop)
  • Crushed ice

Instructions

TO MAKE THE SIMPLE SYRUP:

  • In a saucepan over medium-high heat, add together the water and sugar (stirring them to combine) and bring to a boil, about 1-2 minutes.
  • Reduce the heat to low and simmer for another 1-2 minutes or so. Remove from heat and let it cool completely.

TO MAKE THE MOCKTAILS:

  • In a cocktail shaker, add the pineapple juice, lime juice, cooled simple syrup, and Ritual Zero Proof Vodka Alternative (if using) shaking it together until combined. NOTE: You can also whisk everything together in a bowl if it's easier. If you're not using the Alcohol Alternative, then just shake together the juices + simple syrup.
  • For each mocktail, fill a good cocktail glass halfway with ice, followed by the frozen dragonfruit chunks and mocktail mixture (evenly divided), slightly stirring. Top with lemon lime soda and your favorite garnish (thyme sprigs, mint, rosemary, etc.).
  • Sip and Enjoy!

Notes

  • SERVINGS: To make additional mocktails, simply double or triple ingredients, depending on need.
  • ALCOHOL: If you'd like to spruce things up with alcohol, feel free to add 1 ounce of whiskey, rum, vodka, etc.
