Dairy-Free Chipotle Sauce/Dressing

Ingredients

CHIPOTLE SAUCE/DRESSING:

  • 1 Cup vegan mayonnaise
  • 2 garlic cloves, minced
  • 3-6 chipotle peppers (See Notes for Spicy Level!)
  • 2-3 Tbsps Almond milk, unsweetened (You can use your fave plant-based milk)
  • 2 Tbsps Adobo sauce (If your canned chipotle peppers are in Adobo sauce, just use the sauce from that)
  • 1 tablespoon freshly-squeezed lime juice
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried parsley
  • ½ teaspoon cilantro, fresh or dried
  • ½ teaspoon red pepper flakes (You can omit this for less spicy flavor)

Instructions

TO MAKE THE SAUCE/DRESSING:

  • Add the vegan mayo, garlic, chipotle peppers, Adobo sauce, milk, lime juice, salt, black pepper, smoked paprika, parsley, red pepper flakes, and cilantro, into a high-powdered blender and blend until sauce becomes creamy.
  • Add sauce/dressing to your favorite mason jar or tightly sealed container and refrigerate for 3-4 days for optimal freshness.

Notes

  • SERVING SIZE: This recipes makes enough for 2 servings, however, for more or a larger batch simply double or triple the ingredients. 
  • CONSISTENCY (FOR A DRESSING): To make this more of a dressing for salads, etc. you can add more milk to make it more like a drizzle. I would add about ½ cup milk as a substitute for the original amount. 
  • HEAT LEVEL: To make this sauce/dressing more spicy, add additional chipotle peppers. For less spice, reduce the amount of peppers.
