Ingredients

BUFFALO CHICKEN:

  • 2 cups Easy Shredded Chicken
  • 2 cups buffalo sauce, premium
  • 2 Tbsps organic raw honey (You can sub with maple syrup or Agave)

MELT SANDWICH:

  • 1 loaf ciabatta bread (You can use your fave rustic bread or make my Vegan Everything Bagel Brioche Bread)
  • 2 cups organic kale, chopped
  • 1 cup shredded mozzarella cheese, organic
  • ½ cup shredded sharp cheddar cheese, organic
  • 2 Tbsps unsalted butter, melted (You can also use olive oil, etc.)
  • 1 tablespoon Everything Bagel Seasoning

Instructions

PREP THE BREAD:

  • Pre-heat the oven to 400 degrees Fahrenheit and prep a large baking sheet lined with foil paper.
  • Start by cutting the ciabatta bread in half lengthwise.

TO MAKE THE BUFFALO CHICKEN:

  • In a bowl add the Shredded Chicken, buffalo sauce, and honey together, stirring until combined and the chicken is fully coated.

ASSEMBLE + BAKE:

  • Place the two halves of bread onto the baking sheet with foil paper and on one half of the bread, evenly add the buffalo chicken, chopped kale, and cheeses until completely topped. Then top everything with the other half of the bread and lightly brush the melted butter atop the bread. Lightly sprinkle with the Everything Bagel seasoning and top the sandwich with another piece of foil paper, gently connecting both ends of the foil paper to tightly cover it.
  • Bake the sandwich covered with the foil for 20 minutes. Remove the top foil paper and bake for another 10 minutes or until the bread is golden and the cheese has melted.
  • Remove from the oven, cut in 1-2 inch slices (if desired), plate the sandwiches with your favorite side or chips and enjoy. NOTE: This sandwich tastes amazing with my Creamy Chipotle Dressing/Sauce!

Notes

GUTEN-FREE OPTION: To make this sandwich entirely GF, simply ensure that the bread is GF-Friendly as well as the buffalo sauce.
