Ingredients

DIP:

  • 8 ounces Feta cheese, organic block
  • ½ cup pesto sauce, homemade or store-bought
  • 1 tablespoon raw honey, organic
  • ½ cup Greek yogurt, plain (You can also sub with vegetable stock)

TOPPINGS:

  • 1-2 cups Roasted herb tomatoes
  • Chopped walnuts, toasted
  • Honey, for drizzle
  • Fresh or dried parsley

Instructions

TO ROAST THE TOMATOES:

TO MAKE THE FETA DIP:

  • In a food processor, add the feta in pieces followed by the pesto sauce, honey, and greek yogurt, processing everything on high-speed until smooth, about 2-3 minutes. Add more salt, to taste if needed. NOTE: If it doesn't become smooth enough, add another 2 Tbsps of liquid (water or veggie stock) and process again.

ASSEMBLY:

  • In a plate or low bowl, add the whipped feta, spreading it out evenly with a spoon. Top with roasted tomatoes, chopped walnuts, and garnish with fresh or dried herbs (like parsley or cilantro), followed by a drizzle of honey, if desired.
  • To serve, enjoy with your favorite tortilla chips, crackers, or toasted rustic bread. Also, great with raw veggies like carrots, celery, etc.
  • Bon Appetit!

Notes

  • STORAGE: Place any leftovers in a tightly sealed container in the refrigerator for 4-5 days.
  • HERB ROASTED TOMATOES: To make this, see my recipe here. Also, You can use this roasted recipe for bell peppers if you decide to add those.
