Classic Homemade Shortbread Cookies

These Classic Homemade Shortbread Cookies are buttery, slightly crisp and crumbly on the outside, yet completely soft and tender on the inside. Made with just 3-ingredients, these cookies are sure to satisfy that sweet tooth and pairs perfectly with a cup of tea or coffee if that's your thing!

Ingredients

  • 1 cup unsalted butter, softened (2 sticks!)
  • ½ cup powdered sugar
  • 2 cups organic all-purpose flour
  • Blueberry Jam, optional

Instructions

  • Begin by preheating your oven to 350 degrees Fahrenheit and prepping two baking sheet by lining them with parchment paper.
  • In the bowl of an electric stand mixer (or using a hand-held mixer), add the butter sugar and cream them together on medium speed (this should become 'fluffy-looking'). Add the all-purpose flour, and continue to mix until mixture is full incorporated. **NOTE: Mixture might look crumbly at first, but continue to mix until a soft dough is formed!)**
  • Now, gently form the dough into a ball and place dough onto a floured surface (using flour or powered sugar).
  • Roll and flatten dough into a ¼ thick square using a well dusted rolling pin (to avid snagging or ripping).
  • Cut into medium rounds (I used a biscuit cutter for this) and placed them onto the baking sheet(s). Repeat until all dough has been used. Lightly brush tops of cookies with a little melted butter.
  • Bake for 16-18 minutes, or until lightly golden brown.
  • Remove from the oven and let cool for 10-15 minutes.

Notes

To store: keep cookies in a tightly sealed container for up to 5 days. Can be left at room temperature or refrigerated.
