Frozen Pineapple Margarita Mocktail

Ingredients

LEMON SIMPLE SYRUP:

  • 2 cups filtered water
  • 1 organic lemon, sliced thin
  • ½ cup organic cane sugar

MOCKTAIL:

  • 3 cups frozen pineapples (See Notes)
  • Cooled lemon simple syrup
  • 6 ounces Ritual Zero Proof Rum alternative
  • 2 Tbsps raw honey (See Notes)
  • Pinch of ground allspice

OPTIONAL GARNISH:

  • Lemons slices
  • Pineapple slices
  • Coconut flakes, crushed for rims
  • Fresh thyme or rosemary sprigs

Instructions

TO MAKE THE LEMON SIMPLE SYRUP:

  • In a saucepan over medium-high heat, add together all ingredients (stirring them to combine) and bring to a boil, about 1-2 minutes.
  • Reduce the heat to low and simmer for another 5 minutes or so. Remove from heat and let it cool completely. Discard lemon slices.

BLEND EVERYTHING TOGETHER:

  • In a high-speed blender, add together the frozen pineapples, cooled lemon simple syrup, rum alternative and honey, and blend until smooth and has a slushy consistency. Add more sweetener if needed.
  • ASSEMBLY: For each drink, fill the glass with the frozen margarita mocktail and top with your favorite garnishes: sliced lemons, pineapples slices, coconut flakes, fresh thyme or rosemary sprigs, if desired.
  • Sip and Enjoy!

Notes

  • SWEETENER: Instead of honey, you can always use maple syrup.
  • SERVING SIZE: This recipe makes two mocktails. To make additional mocktails, simply double or triple ingredients, depending on need.
  • ALCOHOL: If you'd like to spruce things up with alcohol, feel free to add 1 ounce of rum, vodka, etc.
  • RIM(S): To make things more fancy, I love to add coconut flakes, sea salt or cane sugar to the rim of my glass(es). To do this, you'll simply need to wet the rims a bit with a lime wedge and then turned facing down, slightly moving it around in the coconut flakes, sugar or salt until covered.
  • FRESH PINEAPPLES: You can feel free to use freshly sliced pineapples in these mocktails, but you'll need to add about 2 cups or so of ice to make things more of a frozen consistency.
