Savory Cajun Shrimp Breakfast Bowl

This Savory Cajun Shrimp Breakfast Bowl is just that----SAVORY + full of flavor! Unlike any typical breakfast bowl, this recipe highlights a bit of spice from the cajun seasoning, sweet from the candied bacon, cheesiness from the creamy polenta, and bursts of other great flavors from the fried egg and greens. Just a complete bowl of goodness!

For the Polenta:

  • 2 cups fresh water
  • 2 cups organic chicken stock
  • 1 tsp sea salt
  • 1 cup polenta ( I use Bob's Red Mill)
  • 2 Tbsps unsalted butter (I use Land O'Lakes)
  • 1 cup organic shredded cheese, Mozzarella or Mild Cheddar (I use Organic Valley)

Spicy Cajun Shrimp:

  • 2 lbs. Colossal wild shrimp, peeled + deveined
  • 2 Tbsps unsalted butter (I use Land O'Lakes)
  • 1 tsp liquid smoke
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 Tbsp dried parsley
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp red pepper flakes
  • 1 Tbsp lemon juice
  • 1 tsp sriracha sauce
  • salt + pepper, to taste


  • 2 large fried organic eggs
  • 6-8 strips candied bacon, roughly chopped (See Notes!)
  • sautéed greens (I used Kale + Spinach)


For the Polenta:

  1. Boil 2 cups of water and 2 cups of chicken stock on the stove on medium-high heat. Then whisk in the polenta and add a pinch of sea salt to taste. Continuously stir polenta until it begins to thicken. Now, reduce the heat to low and let it simmer with a lid cover over the pot. Every few minutes, take off the lid and whisk continuously and then place the lid back on again. **NOTE: Cook for a total of 20-30 minutes, or until polenta has thickened enough to your liking. Turn the heat off and add in butter and cheese, stirring until completely melted and creamy.

Spicy Cajun Shrimp:

  1. Add ALL ingredients (except for Butter) to a small bowl with shrimp and toss until well coated. Heat butter in a skillet over medium-high heat and add shrimp, cooking on each side for about 2-3 minutes (until pink). Add a bit more sriracha sauce if desired and toss shrimp for another minute or so and remove from heat.

  2. To assemble: Add polenta in a medium sized serving bowl, then place shrimp, fried egg, candied bacon, and greens evenly atop polenta. Season with a pinch of salt + pepper, if desired. Wallah!

Tips | Notes:

To make Brown Sugar Candied Bacon:



  1. Place the bacon on a parchment paper lined baking sheet and brush the tops of the bacon with maple syrup and sprinkle on some brown sugar.
  2. Bake in a pre-heated 400 degree Fahrenheit oven for 10-15 minutes or so, flipping the bacon and brushing the opposite side with maple syrup and sprinkling the brown sugar as well. Bake for another 10-15 minutes or until it is completely caramelized and crispy.
