  • Half of Large Watermelon, peeled + cubed
  • 1 large cucumber, peeled + diced
  • 1 1/2 cups fresh mint leaves
  • 2-3 cups fresh water
  • 1/2 cup organic pure cane sugar (I use Wholesome Sweets)
  • juice of a lemon

  1. To start, combine the water and pure cane sugar (or honey) in a small pot and boil on medium-high heat, whisking until sugar fully dissolves.

  2. Remove sugar mixture from heat and add mint leaves to hot mixture and let everything steep for about 20-25 minutes, covered with a pot cover.

  3. Once sugar-mint mixture has fully infused in it's flavor, add it to the blender along with the sliced watermelons, cucumber, and blend for about 2 minutes, on low speed. **NOTE: Be sure to split mixture if blender gets too full to avoid a mess.**

  4. Add in lemon juice and blender for another 30 seconds. Strain juice into your prepared pitcher or mason jars.

  5. Chill juice in the refrigerator for about 2 hours or to serve immediately, add tons of ice to your prepared glass and top with a fresh mint leaf. Store any leftovers in the refrigerator.

  6. Enjoy!

Tips | Notes:

ADJUSTMENTS: To make an entire pitcher of juice, multiply measurements of ingredients list by about 3 or 4 (x's) more, depending on size of pitcher.

STORAGE: Juice can be stored in the refrigerator for up to 3 days, for optimal freshness.
