Loaded Spinach, Bacon, Egg, + Cheese Sweet Potato Boats

Packed with a velvety roasted inside of mashed sweet potato tossed in shredded sharp cheddar cheese, topped with spinach, fluffy scrambled eggs, and a bold flavor from the brown sugar bacon; these Loaded Spinach, Bacon, Egg, + Cheese Sweet Potato Boats are the perfect way to kick start your day, meal prep for the week ahead, or even to enjoy for brunch.

Ingredients

  • 2 medium organic sweet potatoes
  • 2 Tbsps extra virgin olive or grapeseed oil
  • 2 large organic eggs, scrambled (I use Organic Valley)
  • 4-5 stripes brown sugar bacon, roughly chopped (See Notes)
  • ½ cup shredded sharp cheddar cheese (I use Organic Valley)
  • 1 cup spinach, chopped
  • dried parsley
  • BBQ sauce, optional (See Notes!)

Instructions

  • To begin, you simply roast your sweet potatoes.
  • Thoroughly rinse the outside of your potatoes off with warm water and then pat dry. Slice them in halves and poke each potato with a few small holes (to ensure that the inside cooks more quickly + evenly) and coat them fully with extra virgin olive oil or grapeseed oil.
  • Place on a baking sheet and bake for about 40 minutes at 400 degrees Fahrenheit, until sweet potatoes are tender.
  • Meanwhile, cook scrambled eggs and brown sugar bacon.
  • Once done, remove sweet potatoes from the oven and let them cool for a few minutes until you are able to remove ¾ of the insides of the sweet potatoes and mash them together in a small bowl.
  • Once fully mashed, add the shredded sharp cheese and stir until cheese fully melts. Spoon the insides back into each sweet potato cavity and top with chopped spinach, scrambled eggs, and brown sugar turkey bacon. Place assembled boats back into the oven for another 5 minutes. Remove from oven again.
  • Drizzle with your favorite BBQ sauce for an extra bang (optional) and garnish with dried parsley and Wallah!

Notes

TO MAKE BROWN SUGAR CANDIED BACON:
Ingredients:
  • 4-5 slices of thick cut bacon or turkey bacon
  • ¼ cup maple syrup
  • ⅓ cup brown sugar
Directions: 
  1. Place the bacon on a parchment paper lined baking sheet and brush the tops of the bacon with maple syrup and sprinkle on some brown sugar.
  2. Bake in a pre-heated 400 degree Fahrenheit oven for 10-15 minutes or so, flipping the bacon and brushing the opposite side with maple syrup and sprinkling the brown sugar as well. Bake for another 10-15 minutes or until it is completely caramelized and crispy. 
BBQ SAUCE: If you choose to use a store-bought version, my favorite brand is Stubb’s BBQ Sauce.
HOMEMADE BBQ SAUCE: 15 oz. can of tomato sauce, ¾ cups water, ¼ cup balsamic vinegar, 2 Tbsps sriracha sauce, 2 tsps ground mustard, ⅓ cup agave syrup, 2 Tbsps pure maple syrup, 1 teaspoon sea salt, 1 teaspoon onion powder, 1 tablespoon red pepper flakes, and 1 teaspoon smoked paprika. **Whip together: Place all ingredients in a medium saucepan on medium-high heat and whisk together until it begins to boil. Reduce heat to low-medium and let everything simmer for about 15 minutes or so, stirring occasionally. Once thickened enough to desired consistency, remove from heat and let cool. Set aside until ready to use or store remainder in an airtight container and refrigerate for up to 2 weeks.**
