Ingredients

  • 2 lbs. Wild Salmon, diced into small chunks
  • 4 Tbsps dijon mustard
  • 2 Tbsps old bay seasoning
  • 1 Tbsp dried parsley
  • 1 tsp black pepper
  • 1/3 cup bread crumbs (See Notes!)
  • 1 tsp lemon zest
  • handful of organic spinach
  • 1/4 medium purple onions, diced
  • 1 small jalapeños, diced
  • brioche slider buns
  • BBQ Jerk sauce (See Notes!)

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Start by adding the dijon mustard, old bay seasoning, bread crumbs, dried parsley, lemon zest, and black pepper to a medium bowl, mixing everything together well.
  • Add in the salmon chunks and using your hands, massage everything together until fully combined and coated.
  • Take about 1/3 cup of the salmon chunks mixture and pressing firmly, create a nicely flat burger patty. Repeat until you have about 8 salmon patties made.
  • Once all patties are made, add them to a baking sheet lined with parchment paper and bake them in the pre-heated oven for 15-20 minutes, flipping them to their opposite sides at the half-way point.
  • Serve on lightly heated (using butter in a skillet) buns with a slice of purple onions, spinach, jalapeños, and a nice slab of BBQ Jerk sauce.
  • Bon Appetite!

Notes

BBQ JERK SAUCE: Simply add 1/2 cup of your favorite BBQ sauce, 1 1/2 tsps spicy jerk seasoning, 1 tsp red pepper flakes, pinch of sea salt and black pepper, whisking everything together until well incorporated. Keep refrigerated until ready to use. Wallah!
HOMEMADE BREADCRUMBS: To make your own breadcrumbs, simply grind 1-2 cups of cubed bread into a food processor until finely chopped. Place crumbs onto a parchment lined baking sheet and spread out evenly. Bake for 5-6 minutes in the oven set at 350 degrees Fahrenheit, stirring occasionally. Once brown + crisp, remove from oven and let cool. Continue recipe steps and store remaining breadcrumbs in a tightly sealed container.
