MOCKTAILS:
- 2 cups chopped watermelon
- 2 cups frozen strawberries (See Notes!)
- 1 cucumber, peeled + chopped (Freezing it is best!)
- ½ cup freshly-squeezed lime juice
- ¼ cup Agave syrup (See Notes!)
SIMPLE SYRUP:
- 1 cup filtered water
- ¼ cup organic cane sugar
GARNISH:
- Sliced watermelon (Best if shaped in a wedge for edge of glass)
- Sliced fresh strawberries
- Fresh rosemary sprigs
TO MAKE THE SIMPLE SYRUP:
In a saucepan over medium-high heat, add the water and sugar, stirring until sugar has dissolved completely, about 1-2 minutes. Remove from heat and let it cool completely.
BLEND EVERYTHING TOGETHER:
In a high-speed blender, add together the chopped watermelon, frozen strawberries, cucumber, cooled simple syrup, lime juice, and Agave, and blend until smooth and has a slushy consistency. Add more sweetener if needed.
ASSEMBLY: For each drink, fill the glass with the frozen mocktail and top with watermelon wedges, sliced strawberries, and rosemary sprigs, if desired.
Sip and Enjoy!
- SWEETENER: Instead of Agave, you can always use honey or maple syrup.
- SERVING: To make additional mocktails, simply double or triple ingredients, depending on need.
- STRAWBERRIES: If you're using fresh strawberries, simply remove the stems and slice into desired and freeze them for 1-2 hours.
