Simple Lime Rickey Mocktail
This classic recipe for no-alcohol Lime Rickey Mocktails is incredibly refreshing, fizzy, and delicious.
Servings 1 serving
- 1 cup freshly-squeezed lime juice (You can also use organic store-bought lime juice)
- 2-3 Tbsps raw honey
- Sparkling water or lemon-lime soda, for topping
- Crushed ice
- Lime wedges
- Fresh thyme sprigs or fresh mint leaves
TO MAKE MOCKTAILS:
In a bowl, add the lime juice and honey, mixing until combined. NOTE: Add additional sweetener if needed.
ASSEMBLY: Fill an 8-ounce glass halfway with crushed ice. Add the lime mocktail mixture. Garnish with lime wedges and top with lemon-lime soda or sparkling water until filled completely. Add fresh thyme sprigs or mint leaves, if desired.
SERVING: To make additional mocktails, simply double or triple ingredients, depending on need.
SWEETENER: Instead of honey, you can always use Agave or maple syrup or create a simple syrup by boiling water with organic cane sugar to sweeten.
