Ingredients

KAHLUA SUBSTITUTE:

  • ¼ cup filtered water
  • 2 Tbsps organic brown sugar
  • 1 teaspoon espresso powder

MOCKTAILS:

  • ½ cup cold brew
  • 1 cup oat milk, homemade or store-bought
  • ¼ cup vegan caramel sauce, homemade or store-bought (See Notes!)
  • 1 teaspoon vanilla extract
  • Pinch of ground cinnamon

TOPPINGS:

  • Ice cubes, crushed
  • Rolled oats, for garnish
  • Fresh rosemary sprigs
  • Vegan caramel sauce, drizzle

Instructions

KAHLUA SUBSTITUTE SIMPLE SYRUP:

  • In a saucepan over medium-high heat, add the water and brown sugar, stirring until sugar has dissolved completely, about 1-2 minutes. Remove from heat and whisk in the espresso powder until dissolved. Let cool.

TO MAKE MOCKTAILS:

  • In a bowl, add together all mocktail ingredients and kahlua substitute simple syrup, mixing until combined.
  • Assemble the mocktails: For each mocktail, fill a good cocktail or martini glass halfway with crushed ice and pour the mokctail mixture in until glass(es) is filled. Top with sprinkles of oats, fresh rosemary sprigs, drizzles of caramel sauce, or your favorite garnish.
  • Sip and enjoy!

Notes

  • KAHLUA: Kahlúa coffee liqueur is one of the main ingredients in many of the world's favorite cocktails. Therefore, to make this recipe non-alcoholic----I created a great simple syrup substitute.
  • VEGAN CARAMEL SAUCE: If you'd like to make your own homemade caramel sauce, see my DF Caramel Apple Cider recipe.
  • STORAGE (CARAMEL SAUCE): Leftover caramel sauce can be stored in a tightly sealed mason jar for up to two weeks. When ready to use, simply reheat sauce in the microwave at 15 second intervals until softened and at room temp.
  • ALCOHOL: If you'd like to keep this recipe vegan, but want to spruce things up with alcohol, feel free to add 1 ounce of rum, vodka, etc.
  • SERVING: To make additional mocktails, simply double or triple ingredients, depending on need.
