Sugar Cookie Iced Latte (Starbucks Copycat)

This amazing Sugar Cookie Latte (Starbucks Copycat) tastes just like dessert in a glass, perfect for a great pick me up in the mornings!

Ingredients

LATTE:

  • 1/2 cup cold brew
  • 1 1/2 cups oat milk, homemade or store-bought
  • 2 Tbsps Agave syrup
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 drops butter extract, optional
  • 2 tsps sugar spice blend (I love using Primal Palate; See Notes!)
  • Ice cubes, crushed

SIMPLE SUGAR COOKIE SYRUP (OPTION #2):

  • 1/4 cup filtered water
  • 2 Tbsps organic brown sugar
  • 1/4 cup organic cane sugar
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 drops butter extract, optional

TOPPING:

  • Rainbow sprinkles, organic
  • Crushed sugar cookies, optional (See Notes!)

Instructions

SIMPLE SUGAR COOKIE SYRUP (OPTION #2):

  • In a saucepan over medium-high heat, add together all ingredients (whisking them to combine) and bring to a boil, about 1-2 minutes.
  • Reduce the heat to low and simmer for another 2-3 minutes. Remove from heat and let cool.

ASSEMBLY:

  • NOTE: If you're using the simple syrup option (Option #2), simply only add the cold brew, oat milk, and ice cubes together with the simple syrup for your latte.
  • In a bowl, add together all latte ingredients, mixing until combined.
  • To serve, fill ice into a 12 or 16-ounce glass and pour the latte mixture atop ice until completely filled. Top with festive sprinkles (rainbow or Christmas) and for extra fanciness----crushed cookies, if desired.
  • Sip and enjoy!

Notes

  • WHAT PLANT-BASED MILKS ARE GOOD FOR THIS RECIPE? My go-to plant-based brand for Oat milk when using store-bought is the Forager Project. However, you can always use your fave or one of the following: Almond, coconut milk, homemade oat milk (froths/foams VERY WELL), homemade cashew milk, flax milk, potato milk, quinoa milk, etc.
  • SUGAR COOKIE: If you'd like to top your latte with a sugar cookie, be sure to check out my recipe for these Soft Oversized Crinkled Sugar Cookie. Just reduce size of cookies to fit glasses or crumble them on top.
  • SPICE BLEND: If you don't have the Primal Palate spice blend on hand, simply substitute with ground cinnamon and a pinch of nutmeg.
  • SWEETENER: Instead of Agave syrup, you can substitute with pure maple syrup.
