Vegan Vanilla Unicorn-inspired Doughnuts

These Vegan Vanilla Unicorn-inspired doughnuts are soft, sweet, and drenched in white chocolately goodness. A fun and healthy recipe for the kiddies and a sure way to get them happily involved and a mini baker in training. Each colorful edible sprinkle adds a beautiful crunch to the top and know that one doughnut just wouldn't be enough to crave that sweet tooth of yours once you take a bite.

Ingredients

  • 2 cups organic all-purpose flour (I use Bob's Red Mill)
  • 2 Tbsps organic cane sugar (Vegan-approved; See Notes!)
  • 2 tsps baking powder
  • ½ teaspoon baking soda
  • pinch sea salt
  • ¾ cup almond milk (You can use your fave plant-based milk)
  • 1 'flax egg' (2 tsps flaxseed meal + 3 Tbsps warm water)
  • ¼ cup agave (See Notes!)
  • 1 teaspoon vanilla extract
  • ½ teaspoon lemon juice (See Notes!)
  • 3 Tbsps coconut oil (See Notes!)

Instructions

  • Preheat oven to 350 degrees Fahrenheit
  • Add agave nectar, almond milk, egg replacer, vegan butter, and vanilla extract to a medium bowl and whisk until well combined.
  • Add flour, baking powder, sugar, and sea salt and mix until fully incorporated (But DO NOT over-mix!).
  • Lightly grease your doughnut pan (I used Pam spray), and pipe batter into each mold (about ¾ full), and  bake for 12 minutes or until golden brown around edges.
  • Once done, remove from oven and let cool for 5 minutes before transferring to cooling rack.
  • Dip each cooled doughnut into bowl of melted chocolate and then sprinkle with edible sprinkles. Repeat until all doughnuts are done.
  • Bon Appetite.

Notes

FLOUR: If you want your donuts to be more of a ‘cakey’ texture, substitute 1 cup of All-purpose flour with Super-Fine Cake Flour. 
OIL: Instead of coconut oil, you can also use vegetable oil, if preferred.
SWEETENER: If you choose to opt out of pure cane sugar, you can always substitute for coconut sugar or pure maple syrup instead. If using pure cane sugar, ensure that it is Vegan-approved such as the Wholesome brand, etc. 
LEMON JUICE: If you choose not to use lemon juice, simply substitute with apple cider vinegar.
STORAGE: Can be stored in a tightly sealed container and best if placed in the refrigerator for up to 3 days for ultimate freshness.
