Easy Homemade Peppermint Mocha Latte

This Easy Homemade Peppermint Mocha Latte is the perfect warm, + cozy thing to indulge in during the winter months. Believe it or not, peppermint + mocha flavors are a THING and will surely become your newest obsession during the Holiday season! Literally whipped together in a few short minutes, this homemade latte comes fully dairy-free, vegan, + gluten-free. Enjoy this caffeine-filled cup of goodness every morning.

Ingredients

  • 2 cups Almond milk (I use Califia Farms; You can use your own fave plant-based milk; See Notes!)
  • 3 Tbsps Agave or Maple Syrup
  • 2 Tbsps cocoa powder, unsweetened
  • ½ teaspoon vanilla
  • 1 teaspoon peppermint extract
  • 1 teaspoon dissolvable espresso powder (I use the Delallo brand)

Topping:

  • handful vegan marshmallows (You can use CocoWhip instead as well!)
  • chocolate shavings
  • chopped peppermint candy

Instructions

  • In a medium saucepan on medium-high heat, add the milk, espresso, and cocoa powder, whisking everything together and bringing it to a boil for 1-2 minutes. Remove the mixture from heat once incorporated and smooth.
  • Stir in Agave, vanilla, and peppermint extract.
  • To serve, pour latte into prepared mugs and top with marshmallows (or Cocowhip) and sprinkle with crushed peppermint candy and shaved chocolate, optional.
  • Sip and enjoy!

Notes

SWEETENER: You can always use maple syrup, Vegan honey, or organic brown sugar as a substitute for Agave. For vegan honey—-Bee Free Honee, click link.

IS THERE OTHER METHODS TO MAKING THIS? Yup. While I enjoy the slow and true cooking method of using my stovetop, you can make this latte within your blender. Some high-tech blenders like the Vitamix has a heating mode which allows you to blend and warm at the same time, which is one way to do it. Of course, if you’re like me, then using your stovetop is just as easy.
