Easy Make Ahead Chai Latte Chia Pudding

This Easy Make Ahead Chai Latte Chia Pudding is the ultimate healthy option to kick start your mornings. It is creamy, packed with warm, bold Chai spices, and will surely keep you full all morning until your next meal! Plus, it’s made in no time (10-15 minutes to be exact!) and it’s all vegan and gluten-free. Overnight + Make Ahead option available. All vegan and Gluten-free!

Must-Haves:

  • 1/2 cup Chia Seeds (I use Navitas Organics)
  • 3-4 Tbsp pure maple syrup (I use Coombs Family Farms)
  • 1 tsp cinnamon
  • 2 tsps chai spice mix, homemade (See Notes!)
  • 1 1/2 cups Almond milk (I use Califia Farms; You can use your fave plant-based milk!)
  • 1-2 Tbsps Almond butter (I use Justin's)

Toppings:

  • chopped toasted pecans (I use Diamonds Nuts; See Notes!)
  • cinnamon sticks (I use McCormick Spice)
  • Almond Butter (I use Justin's)

Instructions:

  1. Add all ingredients to a medium bowl, stirring until well combined.

  2. Let mixture sit at room temperature for 10-15 minutes or until it begins to thicken and becomes creamy. Stir slightly.

  3. To serve, add chia pudding to a cup or jar and top with pecans, additional chia seeds, and a cinnamon stick, if preferred.

  4. Bon Appetit!

Tips | Notes:

STORAGE: Can be stored in the refrigerator for up to 5 days. Perfect for meal prep for the week!

TOASTED PECANS: Add chopped pecans to a baking sheet and toasting them in the oven (400 degrees Fahrenheit) for 5-10 minutes, tossing them halfway to avoid browning on one side.

NUT BUTTER: If preferred, you can always substitute peanut butter with Almond butter, SunButter (perfect for allergy-free needs!), Tahini (Sesame Seed Butter), Hazelnut Butter, etc.

SWEETENER: Instead of maple syrup, you can simply use Agave.

CHAI SPICES: To make your own homemade Chai Tea spice blend, you can use the following: 2 Tbsps ground cinnamon, 1 tsp ground nutmeg, 1 Tbsp ground ginger, 1 tsp ground allspice, 1 tsp ground cardamom, 1/2 tsp ground cloves, and 1/4 tsp black pepper.

OVERNIGHT OPTION: Follow steps and then tightly cover bowl with plastic wrap and refrigerate overnight (or at least 8 hours).
