- 1 cup spinach, chopped
- ½ onion, chopped
- ½ red bell pepper, chopped
- ½ red bell pepper, chopped
- 3-4 eggs, scrambled
- 1 cup shredded cheese
- 4 flour tortillas
Preheat oven to 35 degrees Fahrenheit.
Assemble all veggies, scrambled egg, + cheese unto tortilla and gently roll into a "burrito-like" shape and place on baking sheet with "flap opening" facing downward.
Repeat until all burritos have been prepared.
Bake for 8-10 minutes or until cheese is melted and tortilla is crisp.
Remove, cut in haves, and serve immediately!
