Breakfast Burrito Recipe

Ingredients

  • 1 cup spinach, chopped
  • ½ onion, chopped
  • ½ red bell pepper, chopped
  • ½ red bell pepper, chopped
  • 3-4 eggs, scrambled
  • 1 cup shredded cheese
  • 4 flour tortillas

Instructions

  • Preheat oven to 35 degrees Fahrenheit.
  • Assemble all veggies, scrambled egg, + cheese unto tortilla and gently roll into a "burrito-like" shape and place on baking sheet with "flap opening" facing downward.
  • Repeat until all burritos have been prepared.
  • Bake for 8-10 minutes or until cheese is melted and tortilla is crisp.
  • Remove, cut in haves, and serve immediately!
