These Strawberry Grapefruit Mint Spring Sodas are the perfect balance between tart and sweet with a nice fizz. Made with a simple mint syrup along with freshly sliced strawberries, grapefruit juice, and a coconut flavored carbonated water, these homemade sodas will leave you feeling refreshed on any sunny day. Vegan option available.
To begin, In a medium pot over medium-high heat, add water and let it begin to boil. Once boiling, add the mint leaves and strips of grapefruit skin and boil for 10 minutes.
After 10 minutes, turn off the heat and gently stir in the honey and pure cane sugar, covering the mixture, and steeping for about 25-30 minutes to ensure that flavors are fully infused and potent.
Once fully steeped, pour Mint mixture into a medium pitcher and set aside. **NOTE: Discard mint leaves from pot at this point**
To Make Strawberry Grapefruit Mint Spring Sodas: Add crushed ice to a glass, fill 3/4 of the glass with the Mint Syrup, add 1/4 cup of grapefruit juice, pour LaCroix Coconut flavored carbonated water over the mixture and add sliced strawberries inside. Repeat for every serving. Enjoy!
STORAGE: Mint syrup can be stored in the refrigerator in a tightly sealed jar for up to a week. **Can be made as a traditional Mint drink with Grapefruit Juice OR enjoyed with the fizz from the Carbonated Water.**
SWEETENER: You can always use 1 cup of honey instead of using pure cane sugar + honey. This makes for a more subtle sweet taste.
VEGAN OPTION: You can use maple syrup as a sweetener instead of honey.
