Spicy Buffalo Chicken Salad Kale Wraps

These Spicy Buffalo Chicken Salad Kale Wraps are filled with so much flavor. Packed with shredded chicken breast that is glazed with a spicy buffalo sauce, along with brown rice, bell peppers, onions, jalapeños, and tomatoes; these kale wraps are the best healthy and easy meal on any given day. Dip them in your favorite dipping sauce and bon appetite! Vegan option available.

Ingredients

  • 2 cups shredded cooked chicken breast (Substitute w/ Beans, Tofu, or other Meat Alternative; See notes!)
  • 1 cup buffalo wing sauce
  • ¼ cup pure honey (Substitute w/ Pure Maple Syrup for Vegan Option)
  • 1 tablespoon BBQ Sauce, homemade or store-bought
  • pinch of sea salt + black pepper, to taste
  • 6 large Kale leaves, rinsed + patted dry
  • 1 cup cooked brown rice
  • ½ red onion, diced
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 1 jalapeño, diced
  • 2 medium tomatoes, diced
  • Your favorite dipping sauce or dressing (I used Annie's Green Goddess Vegan Dressing)

Instructions

  • Begin by adding shredded chicken breast to a medium saucepan, buffalo sauce, honey, salt + black pepper (to taste) and a tablespoon of BBQ sauce, stirring everything together on medium-high heat, until fully coated. Remove from heat.

To Assemble:

  • Take one kale leaf (laying it flat + open) and top it with 1-2 Tbsps of brown rice, buffalo chicken, diced onions, bell peppers, jalapeños, and tomatoes. Repeat for each kale wrap until all ingredients are used. Drizzle your favorite sauce or dressing atop assembled kale wrap and use remaining sauce or dressing as dip, if desired.

Notes

Homemade Spicy BBQ Sauce: 15 oz. can of tomato sauce, ¾ cups water, ¼ cup balsamic vinegar, 2 Tbsps sriracha sauce, 2 tsps ground mustard, ⅓ cup agave syrup, 2 Tbsps pure maple syrup, 1 teaspoon sea salt, 1 teaspoon onion powder, 1 tablespoon red pepper flakes, and 1 teaspoon smoked paprika.
**Whip together: Place all ingredients in a medium saucepan on medium-high heat and whisk together until it begins to boil. Reduce heat to low-medium and let everything simmer for about 15 minutes or so, stirring occasionally. Once thickened enough to desired consistency, remove from heat and let cool. Set aside until ready to use or store remainder in an airtight container and refrigerate for up to 2 weeks.**
