Hawaiian BBQ Buffalo Chicken Pizza

This Hawaiian BBQ Buffalo Chicken Pizza is the absolute best pizza I've ever made. It comes loaded with mozzarella cheese, Buffalo chicken, spinach, arugula, red onion, green bell pepper, tomato, BBQ sauce, and pineapple chunks. This pizza is sure to be a family favorite! Made in just 20 short minutes.

Must-Haves:

  • 1 pizza pie crust dough (See Notes for Recipe)
  • 2 Medium chicken breasts, baked + shredded
  • 1/2 cup buffalo wing sauce
  • 1-2 Tbsps honey
  • salt + black pepper, for taste
  • 1 cup BBQ sauce
  • 2 1/2 cups mozzarella cheese
  • 1 cup pineapple chunks
  • 1 cup diced red onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped spinach
  • 1 cup arugula
  • 2 medium tomatoes, diced
  • Garnish: dried parsley, red pepper flakes, etc.

Instructions:

  1. Now, let's dig into this recipe so that you can grab a slice and enjoy the rest of your week!

  2. Preheat your oven to 425 degrees Fahrenheit and be sure to use a great pizza pan to ensure that your crust is crispy (**See Recipe notes for suggestion!**).

  3. Lightly grease your pizza pan with extra virgin olive oil and place dough on one end of pan, evenly pressing it and flattening it out to fit the entire pan. Gently use your finger to stretch dough until pan is fully covered.

  4. Bake the pizza dough for 5-7 minutes until slightly cooked and then remove it from the oven (keeping oven on) and place it on your stovetop for assembling.

  5. In the meantime, add shredded chicken breast to a medium saucepan, buffalo sauce, honey, salt + black pepper (to taste) and a Tbsp of BBQ sauce, stirring everything together on medium-high heat, until fully coated. Remove from heat.

  6. Spoon a generous layer of the BBQ sauce over the top of crust and sprinkle the mozzarella cheese, then the spinach, arugula, tomato, red onions, green bell pepper, Buffalo shredded chicken, more mozzarella cheese, and pineapple chunks to the top. Lightly brush the top of the crust with extra virgin olive oil to ensure that it becomes a nice golden brown.

  7. Gently transfer the pizza pie back to the hot oven and bake for an additional 15-20 minutes or so, until the cheese has melted and the crust is crispy and golden brown.

  8. Once done, allow pizza to rest for a few minutes (maybe 5 minutes!) so that the cheese sets before cutting into generous slices, using a pizza cutter. Garnish with your favorite toppings---dried parsley, red pepper flakes, etc.

Tips | Notes:

For Homemade Pizza Crust Dough:

1 cup warm water, 1 Tbsp honey, 1 Tbsp vegetable oil, 1 packet instant yeast, 1 tsp sea salt, 1 tsp powdered garlic, 2 1/2 cups organic all-purpose flour.

How to: In the bowl of an electric mixer (with a dough hook attachment), mix together the warm water, honey, vegetable oil, yeast, garlic powder, and sea salt. Slowly add the flour (on low speed!), until fully incorporated and a soft dough is formed. **NOTE: if dough is too sticky, add 1/2 cup of additional flour at a time)**. 

Now, increase speed to high and knead the dough for 5 minutes in the mixer. 

Once done, cover the dough with plastic wrap for 10 minutes, until is rises a bit.

**For crispy pizza, I suggest using a pizza pan with holes to allow the crust to bake through nicely. I used the AirBake Pizza Pan, which can be found at Target!**
