Coconut Mojito Mocktail with Green Tea

Ingredients

HONEY-GREEN TEA SYRUP:

  • 2 green tea bags, premium
  • ¼ cup raw honey
  • 1 cup filtered water
  • handful of basil leaves (You can also use mint leaves, if preferred)

MOCKTAIL:

  • 1 cup 100% coconut blend (You can always use organic coconut water instead)
  • ½ cup Honey-Green Tea syrup, cooled
  • 1 lime, freshly-squeezed
  • Crushed ice
  • Ginger beer, for topping

OPTIONAL GARNISH:

  • Fresh basil leaves
  • Sliced limes
  • Sea salt or sugar, for rim

Instructions

TO MAKE THE HONEY-GREEN TEA SYRUP:

  • In a saucepan over medium-high heat, add together all ingredients (stirring them to combine) and bring to a boil, about 1-2 minutes.
  • Reduce the heat to low and simmer for another 2-3 minutes or so. Remove from heat, discard the tea bags and basil, and let it cool completely.

TO MAKE THE MOCKTAIL:

  • In a cocktail shaker, add the coconut blend, lime juice, and cooled honey-green tea syrup, shaking vigorously to combine.
  • Assemble the mocktail(s): For each mocktail, fill a good cocktail glass (11 oz. or so) with crushed ice and pour half the amount of the mocktail mixture and top with ginger beer until glass(es) is ¾ filled. Add lime wedges inside your mocktail and fresh basil leaves, if desired. NOTE: To be a bit fancy, you can add salt or sugar around the rim(s) of glass(es).
  • Sip and Enjoy!

Notes

  • SERVING SIZE: To make additional mocktails, simply double or triple ingredients, depending on need.
  • ALCOHOL: If you'd like to keep this recipe amazing, but want to spruce things up with alcohol, feel free to add 1 ounce of rum, vodka, etc.

  • RIM(S): To make things more fancy, I love to add sea salt or cane sugar to the rim of my glass(es). To do this, you'll simply need to wet the rims a bit with a lime wedge and then turned facing down, slightly moving it around in the sugar or salt until covered.
